Thank you, [R42]! Here you go:
Egg Salad for Tea Sandwiches
4 hard cooked eggs
1 Tablespoon of peeled and finely chopped celery
4 Tablespoons of mayonnaise
1 teaspoon of Dijon mustard
Sea salt & freshly ground pepper
Mash eggs in a bowl. Fold in mayonnaise, celery, Dijon, salt, & pepper.
Spread softened butter on Pepperidge Farm wheat or white bread. Add egg mixture.
Cut off crusts. Cut into rectangles or small triangles.
One one side edge of the sandwich, spread lightly with mayonnaise then dip just that side in chopped chives.

Yes. It depends on what I'm making, and if I have the time or inclination, but I do it sometimes. I remember my mother (immigrant Italian, not a fussy cook AT ALL) doing it sometimes. She would use a knife to pull some of the fibrous strands from the stalks. I'm not sure this qualifies as peeling in GregWorld, but that's how I do it.
