He did three seasons - that counts as several seasons. While he's got the Superman and other stuff on his plate, I'm betting he never signed on for more than 3 seasons from the beginning. You have to remember that it probably never would have been made without someone like him in the role.
While I don't see Liam Hemsworth as a good fit for the role, I can't really think of anyone else materially better. Remember that a lot of folks didn't think Cavill was the best casting choice for it either in the beginning. People only started warming up to it once teasers started dropping.

He never signed on for more than two seasons at once. He did 1 season and then signed a contract to do 2 more. His pay was bumped to $1 million per episode starting with season 2 and continued into season 3. He made less for season 1.
He decided not to renew for a 4th season. He isn’t breaking contract.

It’s one of Netflix’ premiere prestige shows. They already have a spin-off with Michelle Yeoh coming next month. They’re absolutely committed to Witcher, unlike something like Sandman. I’m very surprised they didn’t fight harder to keep Cavill who is a large part of the success, but they probably felt it was worth it when they dropped a zero from Cavill’s paycheck to Hemsworth’s.

R31. It's actually a decent PR move for him. He's managed to blame it on the writers without really saying anything at all. His fans have run with the insinuation and rumor to construct this narrative for him. And it makes him look like a principled actor who's really dedicated to the source material.
Which I suspect is largely bunk but whatever. Of course, all this deflection on Lauren and the writing team is probably not going to endear him to Netflix or other companies who want to work with him moving forward. I mean, there's a substantial risk that's he's going to come off as difficult. I wouldn't want someone who's willing to abandon a show because they have personal disagreements with the direction.
Luckily he didn't break contract though, so there's that.

The writers for The Witcher are being savaged for how bad season 2 was. People are actually applauding Cavill for leaving the show.
Articles like this are popping up. It would be one thing if they were adapting the novels and making changes due to the differences in media. But, the writers think they're actually improving it, rather than wrecking what made it so popular in the first place.
Apparently, season 2 ruins core relationships among characters that are crucial to future plot lines, so the wholesale changes to the story are inevitable. Whereas Cavill has always been very clear about his love for the characters and story from the books and games. Most people actually see his departure as inevitable after the mess that was season 2.

Liam will bulk up using Chris's trainer. Cavill is not that strong of an actor., and Gerard is pretty one note. A blonde wig and some muscle is all you really need.

Fidelity to source material is nice and all but this isn't Tolkien we're talking about here. Though I'll admit it would take a pretty bad writer to turn a mediocre story into an actively terrible one.

The books are solid, not spectacular examples of the fantasy genre.
One thing to remember is that they were initially written 30 years ago. Ideas and themes that have been beaten into the ground by tv, movies, and other books were not as overdone as they would be if the books were published today.
