Molasses is a byproduct of refining sugar. IMO, it has an umami flavor (sorry). It's ripe for some type of revival in popularity. E.g., Trader Joe's molasses cookies.

Oh my, yes, OP!
I use molasses for my late Grandma Ella's incredible old-style gingerbread. And it's indispensable in several of my own (secret) non-dessert recipes.
But as far as I'm concerned the Brer Rabbit molasses is hot garbage; it imparts a nasty sulfur-y metal tang to whatever you're making.
Grandma's is the only molasses I use regularly. Reminds me a bit of Myer's Rum in its flavor and versatility.

Yup, R16--like rose/vetiver/violet/oakmoss chypre notes in perfumery. Under-40s slate them as "old-timey", Grandma/Gramps fragrances.

The celebrity nutritionist Gaylord Hauser (Garbo was a good friend of his) claimed that blackstrap molasses was a superfood. One of his recipes was a dessert that consisted of broiled grapefruit with blackstrap molasses in the center. I don't think I'd want to try that.

I use it in chili to take the edge off the flavor of the peppers. Works much better than refined sugar.
I don't know about that, R17. Honey works great as a glaze for salmon, but I'd think molasses would overpower the fish.

If you do any Asian stir-frying, it's an ingredient. It's called something else, eg kecap manis, but it's molasses. Add it to the soy sauce and fish oil.

R69 has a point. Korean food has a kind of soy sauce which is called something like "soup soy sauce" in English, and it is thicker than Japanese soy sauce, and has a strong sort of molasses aroma to it, although I don't know that it is even made with sugar. It does have a small amount of honey added in the fermentation process (which goes on for a year), but not enough to make it super sweet. It's *strong* stuff, to Western taste anyhow.

Blackstrap molasses has a strong, bitter sweet taste. I used to stir a tablespoon in a glass of milk....it has a lot of iron and calcium, but I stopped. It was ok, but didn't really care for it. It's the same with sardines for me. I try to like them, but can't.
