Molasses

It looks like a leftover product from the 18th century and it has a weird taste.

Who even uses it anymore? Old rural grannies?

Molasses cookies are awesome - wish I had some!

by Anonymousreply 1August 17, 2022 12:05 AM

It killed a bunch of people and horses in Boston when it flooded the city.

by Anonymousreply 2August 17, 2022 12:06 AM

Well, I'll have mine with Blackstrap molasses 'Cause I can't taste it anymore.

by Anonymousreply 3August 17, 2022 12:08 AM

It's essential in baked beans and very good in for certain roasted meat.

by Anonymousreply 4August 17, 2022 12:08 AM

It’s used in legacy recipes like gingerbread and baked beans.

by Anonymousreply 5August 17, 2022 12:08 AM

[quote]Who even uses it anymore?

People still bake, OP. And use it on pancakes, biscuits, etc.

by Anonymousreply 6August 17, 2022 12:09 AM

It's an ingredient in my momma's rye bread recipe I love.

by Anonymousreply 7August 17, 2022 12:10 AM

It was huge in Boston before. Ben Affleck and Matt Damon used it as lube.

by Anonymousreply 8August 17, 2022 12:10 AM

I love a molasses cookie.

Locally, it became known as 'molassses.

by Anonymousreply 10August 17, 2022 12:13 AM

Molasses is a byproduct of refining sugar. IMO, it has an umami flavor (sorry). It's ripe for some type of revival in popularity. E.g., Trader Joe's molasses cookies.

by Anonymousreply 11August 17, 2022 12:16 AM

I use it in oatmeal cookies and sometimes add a little to my coffee.

by Anonymousreply 12August 17, 2022 12:17 AM

Oh my, yes, OP!

I use molasses for my late Grandma Ella's incredible old-style gingerbread. And it's indispensable in several of my own (secret) non-dessert recipes.

But as far as I'm concerned the Brer Rabbit molasses is hot garbage; it imparts a nasty sulfur-y metal tang to whatever you're making.

Grandma's is the only molasses I use regularly. Reminds me a bit of Myer's Rum in its flavor and versatility.

What's "weird" about its taste? It's used as flavoring so many people must think it tastes good.

by Anonymousreply 14August 17, 2022 12:20 AM

Do you want to buy the unsulfured molasses.

by Anonymousreply 15August 17, 2022 12:21 AM

It's just old-timey, so people have to say it's weird. Until it has a resurgence in popularity, then everybody can love it.

by Anonymousreply 16August 17, 2022 12:21 AM

I bet it'd make a good ingredient for a glaze for fish.

by Anonymousreply 17August 17, 2022 12:23 AM

Has anybody brought back sarsaparilla?

by Anonymousreply 18August 17, 2022 12:25 AM

Horehound also sounds old-timey.

by Anonymousreply 19August 17, 2022 12:26 AM

I prefer sassafras.

Suffering Succotash!

by Anonymousreply 21August 17, 2022 12:34 AM

I make molasses thumbprint cookies with currant jelly every year for Christmas. One of my favorites.

by Anonymousreply 22August 17, 2022 12:37 AM

R17, are you the monster who paired cod and prunes? I'll kill you all if molasses becomes the sundried tomatoes of this decade. All of you.

by Anonymousreply 23August 17, 2022 12:43 AM

You need it for shoo-fly pie.

by Anonymousreply 24August 17, 2022 1:02 AM

My awesome gingersnaps recipe requires molasses.

by Anonymousreply 25August 17, 2022 1:07 AM

R23, that is definitely not me, lol.

by Anonymousreply 26August 17, 2022 1:07 AM

I always have a jar of molasses in my pantry. I use it in lots of baked goods.

by Anonymousreply 27August 17, 2022 1:12 AM

I used it in a custard and it came out tasting like caramel.

On its own it makes me gag.

by Anonymousreply 28August 17, 2022 1:15 AM

For how many years will molasses last in my pantry?

Does this stuff rot my teeth?

by Anonymousreply 29August 17, 2022 1:19 AM

I use molasses in almost anything baked that has ginger. Also in homemade BBQ sauce and rye bread.

by Anonymousreply 30August 17, 2022 1:22 AM

[quote]It's just old-timey, so people have to say it's weird. Until it has a resurgence in popularity, then everybody can love it.

Yup, R16--like rose/vetiver/violet/oakmoss chypre notes in perfumery. Under-40s slate them as "old-timey", Grandma/Gramps fragrances.

by Anonymousreply 31August 17, 2022 1:25 AM

I had a friend who took a tablespoon daily, hoping to reverse her gray hairs.

by Anonymousreply 32August 17, 2022 1:33 AM

Unlike sugar, molasses is good for you; has various vitamins.

by Anonymousreply 35August 17, 2022 1:57 AM

It's a must for homemade BBQ sauce, and works well in marinades.

by Anonymousreply 36August 17, 2022 2:02 AM

Is it like treacle?

by Anonymousreply 37August 17, 2022 2:11 AM

Yes, R37. Similar.

by Anonymousreply 38August 17, 2022 2:18 AM

I lived the ok’d expression “get the molasses out your ass!”

by Anonymousreply 48August 17, 2022 3:22 AM

I'm telling you, r47, molasses is the pit bull of the sweet ingredient world.

by Anonymousreply 49August 17, 2022 3:36 AM

The celebrity nutritionist Gaylord Hauser (Garbo was a good friend of his) claimed that blackstrap molasses was a superfood. One of his recipes was a dessert that consisted of broiled grapefruit with blackstrap molasses in the center. I don't think I'd want to try that.

by Anonymousreply 50August 17, 2022 3:40 AM

[quote] One of his recipes was a dessert that consisted of broiled grapefruit with blackstrap molasses in the center.

If it also included prunes, it would be manna from heaven!

by Anonymousreply 51August 17, 2022 3:42 AM

I've heard of broiled grapefruit with brown sugar in the center, r50.

by Anonymousreply 52August 17, 2022 3:43 AM

Broiled grapefruit with brown sugar is delicious. We had it on Xmas 🎄 morning last year as the first course…followed by many mimosas.

by Anonymousreply 53August 17, 2022 3:51 AM

I miss grapefruit & grapefruit juice. Hard to find!

by Anonymousreply 54August 17, 2022 4:05 AM

I use it in chili to take the edge off the flavor of the peppers. Works much better than refined sugar.

I don't know about that, R17. Honey works great as a glaze for salmon, but I'd think molasses would overpower the fish.

by Anonymousreply 55August 17, 2022 4:09 AM

It’s great in cookies. In Canada we have these Halloween molasses candies. I hate them but some people love them. I was always disappointed because the wrappers were cool but I hated the taste.

Molasses has iron so more nutritious than honey.

I love molasses mixed in milk. I can't imagine it on pancakes though.

by Anonymousreply 64August 17, 2022 9:26 AM

R63: My dad would call it “Mole-asses” to be funny, because mom didn’t like swearing and it would get her comically riled up.

by Anonymousreply 65August 17, 2022 10:38 AM

That grapefruit and blackstrap molasses recipe sounds delicious. So many people can’t eat grapefruit anymore because of medication interactions I think it has impacted their availability.

I love toasted brown bread with butter or cream cheese - full of molasses goodness.

OP, black grandmammies.

If you do any Asian stir-frying, it's an ingredient. It's called something else, eg kecap manis, but it's molasses. Add it to the soy sauce and fish oil.

by Anonymousreply 69August 17, 2022 12:35 PM

[quote] I use it in oatmeal cookies and sometimes add a little to my coffee.

r12 I tried it in my coffee this morning. Interesting change of pace!

by Anonymousreply 70August 17, 2022 1:33 PM

I use it in ginger snaps and gingerbread. I’ve also used it on cornbread, and put it in oatmeal.

by Anonymousreply 71August 17, 2022 1:38 PM

I tried it as lube. Fail.

by Anonymousreply 72August 17, 2022 1:46 PM

I’m sneaking away at work every couple of hours to do shots of it in the store room with the new handyman, I may have a problem!

by Anonymousreply 73August 17, 2022 1:50 PM

[quote]It's terrific with pancakes and French Toast. It's a good alternative to maple syrup.

But you can't save it.

by Anonymousreply 74August 17, 2022 1:53 PM

R69 has a point. Korean food has a kind of soy sauce which is called something like "soup soy sauce" in English, and it is thicker than Japanese soy sauce, and has a strong sort of molasses aroma to it, although I don't know that it is even made with sugar. It does have a small amount of honey added in the fermentation process (which goes on for a year), but not enough to make it super sweet. It's *strong* stuff, to Western taste anyhow.

by Anonymousreply 75August 17, 2022 1:58 PM

In the South, they used to make fried cornbread, and molasses is a traditional thing to put on top of it. Its' damn good stuff.

by Anonymousreply 76August 17, 2022 2:01 PM

Blackstrap is a sexy word.

Blackstrap molasses has a strong, bitter sweet taste. I used to stir a tablespoon in a glass of milk....it has a lot of iron and calcium, but I stopped. It was ok, but didn't really care for it. It's the same with sardines for me. I try to like them, but can't.

by Anonymousreply 83August 17, 2022 3:54 PM

It has a lot of potassium, too.

by Anonymousreply 84August 17, 2022 3:58 PM
