I am spatchcocking a small, plump brined chicken and oven-roasting some fresh cauliflower for dinner, DL. One of the tradeoffs of working from home.
I am also finishing a load of laundry.

Spatchcooking a chicken or turkey does sound “odd” R16, but there is no better way to cook them.
Legs and breasts are cooked more to their appropriate temperature. It is easier to take apart. It is really the way to go if you are going to bake the bird.
It isn’t that difficult to do.

I like eating cauliflower but it smells up the house. It's the same as shrimp - love eating it but stinky to cook. Mashed cauliflower with cream cheese and chives can double for mashed potatoes every time.

Hello friends! My spatchcocked chicken was a triumph, if I may say so. Perfectly, evenly cooked, all the way through, but moist and flavorful. (I think brining made all the difference.) Only 45-50 minutes in the oven!
The husbear not only approved, he said he only wants chicken prepared that way from now on! Imagine.
