Perhaps it was already in his contract for season 1 that he would get a producer credit for season 2 although he knew that he woudn't be in it. Producer credit means that you get money for it. So on top of his salary for season 1 he probably was able to negotiate to get a part of the DVD and streaming revenue for s1 and also part of the revenue that season 2 would produce. He had a bit of negotiation power because of his GOT background and Cindarella. That could be a reason why he was able to negotiate good terms before he signed on for the role in Medici.
