Tommorow For Lunch

A large salad with Shitake mushrooms, lettuce, green cabbage, peas, cucumber, cauliflower.

Two open faced sandwiches on corn tortillas with vegenaise, Smoked Five Spice Very Firm Tofu , German mustard, lettuce and tomato plus I might cook a Golden Sweet Potato as well- a tasty , nutritious , healthful lunch.

Sorry my datalounge friends. I usually make my sandwiches on corn tortillas but Friday's lunch will be served on three slices of No Salt Ezekiel bread not corn tortillas.

R2- I made the lunch two days before. I ate it today. I really enjoyed the tofu- it's very firm and tasty and nicely seasoned- filling but low in calories.

For lunch today, I had a homemade bacon-egg-cheese bagel with little homegrown cherry tomatoes cut up and topping the egg and cheese. it was delicious.
