Vanity Fair, for sure.. Becky Sharp should be DL icon. I've read (and love) most of the books on your list, but for fun and breezy, I vote for Vanity Fair. You won't regret it!!!

Vanity fair is amazing. Becky Sharp is one of the greatest antiheroes of all time. The Reece Witherspoon film was a travesty, trying to make her likable when the truth is she’s an utter snake

If you want to read Dorstoyevsky, I'd try The Gambler or The Idiot. The Brothers Karamazov is a lot heavier and less fun. If you want Russian and fun, try The Master and Margarita (Bulgakov) or Dead Souls (Gogol). I think they are more appropriate for August.

If you've never read "Gone With The Wind" then you definitely should. I first read it when I was 12 (took me most of the summer) & loved it.
