Both the Melba toast and the Melba Peach desssert were created by a French chef named Auguste Escoffier in honor of the 19th-century Australian soprano Nellie Melba.

Her real name wasn't Nellie Melba. The "Melba" was adopted for her hometown, Melbourne. So the original dish IS "Melbourne" Toast.
