I make an AMAZING potato leek soup but I never serve it cold.
I make it when I have leftover mashed potatoes and then add additional diced potatoes so it's nice and thick. I also add a bit of shredded gruyere to my bechamel base and top it with Applewood bacon bits for added smokiness. I use the leftover leeks and gruyere for a galette that I serve on the side (if I have figs on hand I'll add those too). It's the perfect winter lunch.

^Also, there is absolutely no way to make a good potato leek soup without cream or fat. I'm of the mind that if you cannot do butter, you just need to find another cuisine, because French food without butter/fat is not French food worth eating.
