I would leave out the curry but yes celery is a vegetable I would put in. I’d also garnish with a slice of tomato and some lettuce. Typical garden veggies.
I wouldn’t put fruit in a sandwich — no strawberries on my ham sandwich.
Edit: I make one exception — leftover Thanksgiving sandwiches, because they’re supposed to replicate the holiday meal. I put cranberry sauce on — had to come clean on that!

Diced jicama is a good substitute for celery, if you want a light clean vegetable crunch but dislike celery. I like either, but there were many strong feelings on that recent celery thread.

You know...I get that some people don't like celery. It's a stronger flavor and many people have strong feelings about it, similar to broccoli.
However, JICAMA is the most bland, useless vegetable I've ever encountered.

r15 I bought curry chicken salad at Trader Joe's for tomorrow's lunch. After I posted on this thread, I actually called a local pizza joint I haven't been to before to ask whether I could buy some Hawaiian pizza by the slice. I can. And I will. But I may have plans tonight with someone else, so outlook for pizza tonight is iffy.
So yes, I didn't go through with either so far today, but have made plans for both for tomorrow.

A market near me makes a fantastic yellow curry chicken salad with sliced almonds, currants or red grapes, and apple pieces. Its a great summer option because its light, fresh and substantive without being too heavy.
