I’d only sympathize were she stuck sitting next to or near someone wearing cologne or perfume.

People should refrain from wearing either to work or in a car, plane, etc.

Very lightly scented body lotions are OK, but slathering one’s self in strong fragrances isn’t cool.

It’s actually a tricky situation.

If it’s a common health concern - cigarette smoke - we ban it from the plane.

If it’s a rare health concern - coffee/perfume allergy - the passenger has to find a way to put up with it (or travel private).

If it’s potentially manageable health concern - tree nuts - it’s completely up in the air.

I might have considered the “no coffee” request reasonable in isolation (giving her the benefit of the doubt*), but fragrances and jet fuel? On a plane? If your life is really threatened by those the only solution is to not fly. If it does not threaten your life, take an antihistamine and shut up about it.

* I give her the benefit of the doubt because I had a friend who was killed by an allergic reaction to an odor. Something in a sea food market he walked through.

This has become a real problem. The claim that people can have allergies to the smell of coffee or (even more common) the smell of peanuts is just biologically impossible; you have to be exposed to proteins to have a genuine allergic reaction, and neither the smells of peanuts nor of coffee are carried by proteins.

People can have sensitivities to those smells, which means they can give them anxiety or that they dislike them. (In neither case would it mean you could die from exposure to the sent, although you might pass out from anxiety if you are wound that tightly.) But that does not mean airlines are responsible for protecting you from those smells.
