R18, it was not "made up by AI." The Boston Globe story (among many others, but the Globe is the paper covering Vermont most closely) contains the exact quote directly sourced to farmer Machia.
In the day and age of unrestricted AI, it is prudent to verify any story with multiple credible outlets. I'm not saying the piece that OP linked isn't AI or at least AI-enhanced, but the element that I quoted was and is authentic.
I applaud your skepticism, but it is misplaced.
