Fast food Mexican chain: Del Taco.
But any local Mexican restaurant will be pretty good - if not sometimes too similar.
There's a default Mexican menu for American palates that is so repetitive. There are more authentic places, but you have to search for them - and they are worth it.

Of the three, Chipotle. But there’s a local ghost kitchen near me that makes much better food. I don’t know how authentic it is, but it’s better than any other Mexican food in my city. Even their cornbread is the best I’ve ever had.

Pancho Villa’s had the best Mexican food- this was in the mid to late 1980’s. It’s long since out of business.
