Macaroni and Cheese

Is it a main dish or a side?

Both, but I generally like it as a side now. I make the Fannie Farmer recipe. It's good with Cheddar but especially good with Gruyere. I also like to top with toasted panko breadcrumbs before putting it in the oven. As a main, I like it with stewed tomatoes. It's the only reason I would ever but stewed tomatoes, but it's really good.

Why, thank you R2! It's been wonderful. Very relaxing. My partner said this is the best beach vacation we've had. We didn't bog ourselves down with a lot of activities. And the location is just stunning.

And I forgot, the breadcrumbs get toasted in butter. Lol

I consider plain M&C a side dish. But when I beef it up with lobster tail or shrimp it's definitely a main dish.

I use the recipe that was on the box of Creamettes macaroni.

In fact, when my grandmother died, I inherited her recipe boxes. One of them had a piece of the Creamettes box with the recipe on it. Has to be from the Fourties. I still use it.

I like mac & cheese very much, but I find attempt at fancying it up kind of annoying. Sure, throw some bacon or tuna or whatever in with it, but Jesus, no amount of pasta and cheese is worth $45 bucks at a steakhouse. (I'm looking at YOU Tom Coliccio.)

And don't get me started on putting it in some sort of bread bowl or whatever. A woman in my office used to go to Panera every day to get mac&cheese in a bread bowl (she was a vegetarian and let everyone know it.) It just looked so squishy and gross to me.

Hi - I forgot to add at R1 that I also add a bit of cayenne and a grating of fresh nutmeg to my cheese sauce. God, don't let me turn into Gerg.

R12, Julia Child was a great believer in fresh nutmeg, with the caveat, there should only be enough for a subtle hint, but not to the point where one would say, "Oh, nutmeg!"

I made R1's recipe yesterday. It was amazing. The only thing I did differently was add two eggs and did half sharp cheddar and half Monterey Jack. Thank you for posting that.
