A pre-packaged salad from Safeway to which I added half an avocado, a hard boiled egg, and roasted beets. Made my own dressing of olive oil, lemon juice, basil, and pepper. Low sodium goodness and no added sugar. Just moved into a hotel room with a mini kitchen for a week until escrow closes on a house we bought for retirement. Amazing things can be made with a small toaster oven and a saucepan. Going to make an easy, sugar-free blueberry crisp for dessert and then for breakfast tomorrow.

Lebanese baked chicken thighs with aioli, roasted vegetable salad, sauteed broccoli raab with garlic, red pepper flakes, and lemon juice.
The Lebanese seasoning didn't really have the impact I was looking for. They were supposed to be grilled, but it's cold and nasty here, so they went into the oven. The recipe called the chicken to be served with toum, but I already had aioli from last night, so I used that. I cooked chickpeas to make hummus, but I didn't buy any pita, so that's on tomorrow's agenda.
Inspired by the post about someone wanting to know how to start the Mediterranean Diet, I've started it myself. I'm trying to cut red meat to once a week, chicken twice, fish three times, and one night vegetarian. My partner whole-heartedly approves (we had red meat like four times a week before).
Also tomorrow, I'm going to tackle galaktoboureko rolls, Greek custard rolled up in phyllo pastry baked and soaked in syrup.

I'm getting lazy, too, as I enter my 70's.I used to not cook once or twice a week, but now, I am reaching into the freezer for stuff most of the time. Oh, I will make a baked Salmon fillet, and microwave a baked potato, steam some vegetable, but to cook an actual meal with effort is no longer interesting to me. The problem is, when I buy something like Costco's homemade chili, or a bag of frozen Chicken tenders I know they have a higher sodium content than I should have and it isn't healthy, but it's something I can't seem to muster the energy to stop. I made myself a mixed salad yesterday. Avocado, Gorgonzola crumbles, slices of Anjou pear, .It was delicious with a balsamic vinagrette.

Made a Mississippi Pot Roast.
Last week I bought a 3-4lb chuck roast. Yesterday I cut slits in it, and put 5-6 sliced garlic cloves in the slits. Put roast in slow cooker, topped it with powdered ranch dressing and au jus, 6 pepperoncinis, and 1/4 cup cubed butter.
Cooked it on Low for 8.5 hours, adding cubed potatoes, carrots, and bell pepper slices at the 6hr mark.
My Dad's sitter just had some and went back for seconds. Fam will have it for dinner.

It's cold, damp and miserable here. Feels like February. I'm cooking chicken thighs in the instant pot with chicken stock - 10 minutes on high. Another sheet pan with eggplant (olive oil, salt, and pepper), then fixed with extra-virgin olive oil, vinegar, garlic, oregano, fennel seeds, red pepper flakes. I use Chinese eggplant cut into cubes, and add basil (or parsley). It looked sad without anything green.

R183, I bread it using panko for exactly that reason. I bread it, fry it, and the add the sauce and cheese and pop it in the oven for about 10 minutes so the cheese melts. It's crunchy and delicious. If I did not bread it it would be mush.

Oh, sh*t! All this talk about galaktoboureko reminded me to check when Greek Easter is. This year it's on the 20th -- same day as Fake Easter. Better get busy.
There's a block of Phyllo dough somewhere in the freezer. Even my Mom hated working with it. I'll use the Phyllo to make Spanakopita triangles with half feta and half ricotta due to my salt restrictions; Koulourakia (butter cookies); Greek lemon potatoes (so simple and easy); lentil soup, and a small rack of lamb ($$$) that I'll marinade overnight, then grill. Salad will be just some fresh spinach with cucumbers, cherry tomatoes, and a simple dressing of olive oil, lemon juice, red wine vinegar, garlic, Dijon mustard, and oregano. No salt in the dressing and no Kalamata olives or feta, which I miss. There's no way I'm going to try to make that braided bread again.
Husband and I moved to a new city, so it will be just the two of us this year.

Sorry about your salt restriction, R201. I generally make koulourakia (butter cookies) at Easter, but we're leaving Thursday for vacation in the South Pacific, so I'm not cooking any Easter stuff this year. I do have a few more galaktoboureko rolls in the freezer for a few more days. I was going to make some spanakopita triangles to have on hand, and I have ricotta in the refrigerator, but I've run out of time before we leave. I tried to make the Easter bread (with mahlab and mastic) a few years ago during COVID, but it was kind of a fail. It came very dense. I'm sure it was user error. Anyway, I turned it into overnight French toast and used orange zest and vanilla to flavor the eggs. I made it in foil pans and gave it to the lesbian couple two doors down, and my best friend and his partner. They still mention it.
We spent Easter Saturday and Sunday on Santorini back in 2019. We went to midnight mass in a small town. A real experience!

r233 @Dustin, we loved Fiji (mostly for snorkeling and SCUBA) way back in 1999. But the food was a bit boring at the resorts where we stayed. We visited islands in the Yasawas and Mamanukas. Heaven! Bula bula!
We'd been to Tahiti and Moorea a few years prior, and the French influence was clear -- the food was spectacular.

I've been on the Mediterranean diet for about a month, so I'll probably stick to fish dishes. The fish and chips we had for lunch was very fresh, but wasn't great. However, the people who work at our hotel in Nadi are so incredibly lovely, we really didn't care.

Sounds like a weird dinner but I think it will be good. I made some homemade flatbreads and a dipping "sauce" to eat it with which looks and tastes AMAZING: it has grated lemon peel, diced tomato, diced olives, diced garlic, chopped parsley, parmesan cheese, a bit of lemon juice, fish sauce, red pepper flakes, some of the salt water the olives came in, a tiny bit of olive oil (I barely had any left, but it didnt need it, it was already pretty liquid-y) and a tiny bit of chili oil for kick. It did become a little too salty but I added a bit of water and it took care of that. It's so good, looking forward to enjoying it with some chilled white wine.

Consider making gumbo without the okra. Got onion and celery, cooking oil and flour? You're good. Save some sausages for red beans and rice. We routinely sub red bell pepper for green pepper.

This is the last full day of our vacation. We're in a pretty remote location, so most of our food has come from the resort kitchen. Had a very light vegetable soup, I split an order of Mongolian beef with my partner, and a slice of a pineapple dessert.

R22 - I'm embarrassed that I called it a salad. It's a very simple dish my mother used to make. Cook the potatoes in simmering water. until tender. Take them out of the cooking water, reserving the water. Peel and cut into chunks. Add some of the cooking water to the potatoes, a little at a time. Not too much, but allow the potatoes to absorb some of the water. This is so the potatoes don't soak up too much oil. Then smash garlic, add it too the bowl, Add some good EVOO, salt, and chopped Italian parsley. Let it stand for a while for the flavors to meld a bit (while you're making the rest of your dinner), then add a bit more olive oil, and check if it needs more salt. That's it. Very simple, but delicious. I've started using this olive oil.
I like it better than a lot of the ones I've tried. Fairly reasonably priced, not as bitter as some of the popular brands.

R311, my family's version is to boil the potatoes, and cut them into bite-sized chunks. Smashed garlic, salt pepper halved cherry tomatoes and cut green beans, that have been cooked and cooled. Add parsley, fresh basil, and let it set for a few hours in the Refrigerator. The olive oil should be drizzled and give it good coverage, but don't over saturate them.
