I grew up in the bakery business, and while I guess it's possible to get stuck inside a walk-in oven, I suspect she had a health crisis and either died or passed out from something else while inside.

A few things I gathered from the comment section at R65's link:

• The young lady may have been slightly "impaired" developmentally/cognitively (i.e., special needs).

Not only was she 19 years old and working alongside her mother at the same place, but mom checked in on her frequently. The mom supposedly became concerned after not seeing/hearing from her daughter for over an hour).

• Although they told the emergency dispatcher the oven was on, it may not actually have been. Apparently those type of industrial ovens go up to 500° or more, and take hours to cool down. Since the store closes at 10pm and the incident occured around 9 or so, the oven may have been turned off and in the process of cooling, but still hot enough to be lethal (which is what they meant).

• Although the doors of those ovens don't lock from either side, they DO seal tight, so it would take a bit of effort to open.
