Help Me Repair My Dinner This Week
Because of general pre-holiday laziness, I have been making all of my meals for the week on Sunday. This week I just decided to make a slow-cooker meal and just have it every night:
- Chicken, cauliflower, onion, chicken broth, curry and ginger in the slow cooker for five hours.
- After five hours, shred the chicken, add peas and coconut milk
- Serve over rice
It's fine, but it is missing some sort of sweetness. I thought the coconut milk would add some, but no.
I'm thinking maybe pineapple or yellow raisins.
Any other ideas?

Golden raisins or currants would be nice.
Or you could just serve this with some chutney to accompany it. You can purchase jarred mango chutney in the international aisle of most supermarkets.

Add tomatoes and/or apple. I wouldn't add the cauliflower until the end of slow cooking but don't know how mushy it ends up being. Apple would add nice texture. But pineapple isn't a bad idea either.
Something like this sounds good

Also once made curry with banana as weird as it sounds.

Dried plums and tomatoes perhaps? They rescued my rancid halibut.

OP Here-
Everything is already made, so I am looking for something to add for the reheat.
The cauliflower actually stood up nicely to the slow cooking and really took on the curry and ginger nicely.
I'm liking the idea of adding some chutney on the side.

Just add sugar or honey.
I don't like how raisins become waterlogged and rehydrated. The good thing about raisins is the chewiness and concentration of flavor (from being dried).

I never make ethnic cuisines where there are native chefs who can do a better job: Japanese, Indian, Thai, Peruvian, Lebanese, Mexican (the good stuff like mole from scratch). This seems like a poor use of ingredients.
