Looking for Lunch Ideas

My favorite lunch is a tuna salad sandwich, but my primary care doctor tells me that shouldn't be an every day thing, which I get. My husband also dislikes tuna salad, but I am the primary cook in the house and am always searching for things to make, We both like hummus, and that's been lunch this week -- home made hummus, pita and grapes.

What are you having for lunch these days?

If you are making and eating lunch at home, I love this sandwich.

I'm lazy and use bagged pre-shredded angel hair cabbage. I make the whole thing on a large pancake griddle so it can all cook and toast at the same time.

If you're at home for lunch, I don't see the problem. Just shop for and eat what you like. It's people who pack lunches for work that have more of a problem.

r3, It is very tasty. Also very filling so you could split one with husband and still be satisfied if you ever wanted to try it. I only use one egg, which is a savings of 70 calories FWIW.

When I hate meat, a favorite sandwich was chicken and chutney, with just a little bit of mango chutney to add flavor to the chicken. Nowadays I don't eat meat, so it's cheddar-and-chutney, another excellent combination!

And when I have a hummus and pita lunch, I throw in cucumber slices, grape tomatoes, olives, and slices of haloumi cheese instead of grapes. Perhaps slices of sweet onion, which I'm told is authentic, but that depends on how close I'm going to be to other people. Hummus needs things that are savory or crunchy to go with, not just pita.

Sometimes I buy those Taylor premixed salads. I add more vegetables to it. Mix it up with your favorite dressing and add some rotisserie chicken to it.
