OMFG I LOVE haddock chowder!!! Screw the corn, make PROPER Maine haddock chowder - just potatoes, onions, fish, and cream!
NO ROUX. Chowder made with a roux are inferior to proper Maine chowder, where the broth is made of the naturally thickened potato water and the cream. I will accept no dissent on this!

Sooner or later everyone who authenticates all of their posts gets attacked.
It's just the way it is, they are seen as attention-seeking, self-aggrandizing and attempting to create a "persona" on the Datalounge rather than just being a normal, anonymous user of the site.
I'm not wild about authenticators but I'm not a Greg-hater. He seems fine to me, I like his food threads. I'm just explaining some of the reasons why I think he gets attacked all the time. Authenticating just puts a target on your back, I don't see any need for it.

That's true, R16. Sometimes I'm away from the DL for weeks, even months at a time. Other times I'm bored and I'm on all the time. When I'm on all the time I notice that I begin to draw the ire of certain other posters - they're the ones who are always on all of the time.
Greg, I actually don't see the need for authenticating and I'd prefer it if no one did it. I also don't see the need for attacking those who do authenticate but I don't know, it's weird. That bunch of lesbians who insist on authenticating like some chick-clique of the Datalounge are so fucking annoying. In their case it is attention-seeking and it is attempting to have "personas" on the DL. Blech. Automatic F&F whenever I see them, don't give a fuck what they're yapping about.

There are always jealous bitches here who will attack any authenticated posted who gets more attention or admiration than they do, they really are just jealous and are easy to ignore. I agree with R31. I have always purchased seafood from Wulf’s and counted on Alan Wulf to provide me with not only the freshest seafood, but always the most perfect looking uniform cuts.
Alan would give me 20 or 100 pieces of the most perfect salmon. Uniform thick 6-ounces pieces with the bones removed. Or the most beautiful uniformly-thick pieces of cod.
For many years I went to their shop at Harvard Street in Brookline (there since 1926), until they they closed in 2016 to change their business model. For the last couple of years, they’ve been on the Boston Fish Pier and are selling wholesale to upscale clients like Daniel, the French Laundry, and Jean-Georges.
I have a relationship with Wulf’s, so still can purchase fish from them for important dinners and events, or if I’m making a crudo, tartare, or ceviche and want the freshest and highest quality seafood.
For small, weeknight home dinners, I often just go to Whole Foods.

Greg, I'm on an empanada kick. I would like to make a guava and cheese empanada using Guava Gourmet jam and cream cheese, but that filling gets too hot and bubbles out of the empanada before it is finished air-frying. When I bite into the empanada to discover there is just a trace of the filling that once was, the feeling reminds me of when I was poor and would dream of finding $20, and wake up to a tightly clenched yet empty fist. Disappointed is not a strong enough word.
I have fried-fried a guava empanada before, and didn't leak at that time. Do I need to lower my air fryer temperature and cook it longer, or raise the temp and cook it for a shorter period? If you have any quibbles with this "recipe", don't just tut-tut me, please tell me what substitutions I should make.
