I’ve only had rabbit and venison (that I know of). I’m not a picky eater and it was surprising to me how unpalatable I found both, but the rabbit was worse i had the venison at a chili potluck and it was Ok. I had the rabbit at a high end midtown restaurant over 20 years ago and I had to choke it down. I’d ordered it out of curiosity and it didn’t occur to me that the taste would be objectionable. And the was nothing objectively awful about tor - it was just the unfamiliarity.
I told my dad about it after the fact and his response was, “Well, it’s basically a rat.” He was pretty smart.

Venison if cooked right is quite nice. Had a version in a blackberry glacee at a high end restaurant that was delicious. My step-father hunted. My mountain woman aunt shot a bear and gave us some sausage. Fatty and made a greasy mess all over my mom's kitchen, pissing her off. Don't remember much else. Elk is supposed to be quite good.

R56, i am from Portugal. Here is an expensive dish, you can find it in some restaurants, usually baked in a pie. My mother does them on Christmas day in the oven, with a white sauce and fried bread. It is delicious.
I have no idea how common they are in other countries (except Spain, where they do it with a vinaigrette sauce).

I love wild boar, every Sunday after we'd drop our bales to the cotton gin, Miss ReRe would watch the young ones while daddy and I would snare us a young boar, which usually gathered at the bottom of the holler. Mama would would put the boar along with turnips or whatever she had into a dutch oven into an open fire, that would cook all day. All the rest of the meat would go into the smokehouse and we'd enjoy it several months down the road, sometimes daddy would batter with Miss Jennie at the Hollingsworth mercantile and he'd trade for shoes and school supplies.

The wild boar I've had was a stew imported (canned) from Germany, while the squirrel I've had was shot in Kentucky by my Appalaichan neighbors. I've always wanted to try pheasant and grouse, but they're pretty expensive on D'Artagnan's website.
