It's just videos of shit with the levels cranked so you can hear every little sound. It ruins a lot of videos. There are some weird people out there who like to beat off to the sound of other chewing their food I guess.

I fucking hate it. It agitates me so much. It seems to be a requirement for cooking videos on YouTube, and that trend needs to die. I remember there was a trend in TV commercials in the early aughts to have hyper articulated sounds, and I hated it then, and I hate it now.
I don't need to hear you scrape the blade of a knife across the cutting board before you cut anything. Also - bad for your knife edge.
Also, you don't need to spin eggs across the counter every time you use an egg.

I haven't listened to her in a long time but at the height of my insomnia, I listened to a lot of her vids to help me get at least a few hours of sleep, she knocked me out.

While that's a big part of it, there is a lot more to it than that.
There are oddly satisfying videos of people cleaning rugs. Watching them clean the rugs and seeing them get cleaner is strangely rewarding.
There are also videos of things like ear cleaning (watching them take out HUGE chunks of ear wax is both gross and engaging) and a whole series of "hair care" where you watch black women get their hair straightened and cut. There a really popular channel where a woman does "historical" cooking and uses 200 year old methods.

So, I'll answer this as someone who watches ASMR, as I don't think a real answer has been given yet.
The origin of ASMR was a (relatively) small group of people who, through the power of the Internet, realized that they experienced a tingling sensation when certain people whispered or talked in a certain way. This quickly expanded to other sounds. Other "triggers". This expanded further into general relaxation, the concept of "very satisfying" and calming videos, help with sleeping, etc. Today it's a large umbrella and people watch ASMR vids for different reasons. Many people don't get those tingles. They just find it relaxing. And there is money to be made for doing something that almost anyone can do (disclaimer: if they put in the effort, of course. You have to be willing to do weird shit all the day and edit that shit, especially the audio. It's a lot of work, which I can't imagine would be intellectually stimulating.
Of course, there is the sexual angle too. Some definitional jackoff to the attractive ones. I'd rather fuck or watch porn, but who am I to judge?
My personal story: When I was a boy, whenever my great-grandmother would talk, not to everyone else, but to me, she used this soft, almost whisper like voice It gave me the most pleasant sensation on my head and neck. NOT the same as goosebumps from music. The closest thing I can compare it to is using one of those scalp massagers. Not 100% like that, but very close. For years, I thought it was just one of those things, until I came across a few vids on YouTube. Note, I'm a millennial, and watched a lot of YouTube when younger.
I miss you, (great) grandma. You were the only decent person on that side of the family. At least you lived until almost 100. Sometimes the good don't die young.

I find some of these ASMR videos very relaxing and they do help me to take a nap if I'm sleep-deprived & have anxiety.
Some of these YouTubers call everything ASMR and it's not all ASMR.
For example, eating sounds. That's actually unpleasant to a lot of people, including me. There's a guy who does cooking demonstrations that I like, but then he tastes his food and makes these disgusting smacking sounds. Makes you appreciate people who can eat silently.

I follow a bunch of ASMR artists on YouTube to help me drift off to sleep. It's great. Not into the mouth sounds or mukbang ASMR. But soft talking, tapping, and light triggers knock me out. A lot of cute twinks seem to do it and the shirtless Turkish massage videos are pretty popular at the moment.

I’m 33 and HATE ASMR. The tingling sensations are at best uncomfortable and at worst painful. I used to think I was the only one who felt a physical sensation from the sound (I distinctly remember my first time feeling it was as a teenager in a pharmacy standing near a Russian couple whispering), and was flabbergasted when I heard that others not just felt it but liked it. It also explains why I always disliked whispering in general. Two of my biggest pet peeves in film/tv is when two characters are alone yet are whispering, and when actors whisper because they think it seems intense.
