Stumbled upon a tasty sandwich combo and I'm not drunk or stoned!
I was in need of a snack and opened the refrigerator to see what would satisfy. I roasted a chicken a few days ago and have leftover meat. I also had some diced cucumber and sweet yellow pepper left over from rice/bean burritos I made a few days ago.
So I made an ad-hoc chicken salad with some shredded chicken, the diced cucumber and pepper together with some green goddess dressing plus some fresh ground pepper. Toasted 2 small pieces of sprouted whole grain bread and slathered one side with avocado, added the chicken salad and sprinkled about a tablespoon of bottom-of-bag Ruffles potato chips crumbs on top.
Nothing fancy, but it was damn delicious. I think I'll be making this again as it really had a nice combination of flavors.

Interesting combination. I was going to go grocery shopping tonight but we got a lot of snow so I said forget it so I will have to get creative with what I have here too. Tonight I made a tuna melt. YUM

If I don't have mayo of any kind I've been known to have a chicken sandwich with hot sauce or even tartare sauce which gives it a tang.
