Bridgerton popularized them, but I've really enjoyed string quartet versions of various songs. 2 Cellos also does some good versions of songs.
I can imagine a couple dancing their first dance at a wedding to this.

Jackie De Shannon’s pairing of Little Anthony and the Imperials’ Hurt So Bad in a medley with the Supremes’ You Keep Me Hangin’ On, turning the latter from bouncy to outright tormented, far more in line with the lyrics.

Tori Amos reimagined several of her songs with a string octet in 2012 (ten frigging years ago! How?), and "Hey Jupiter" is my favourite. I remember listening to this on repeat on my way home from work.

I have 2 "reimagined" faves, the U2 version of "Night and Day" from 1990...back when U2 was still excellent...haunting, sexy cover
And David Bowie and Angelo Badlamenti's absolutely beautiful retelling of "A Foggy Day in London Town"...Bowie sings beautifully and that orchestration...always makes me tear up in the end

Chrissie Hynde’s lo-fi album of Bob Dylan covers is exquisite. She focuses more on forgotten gems from lesser-known periods like his much-maligned Christian record rather than doing a zillionth version of the usual classics.
