Isn't Lemon Meringue pie just the best pie ever?

Damn, R13. What a piece of crap that is. "Mah keeds, mah keeds, mah keeds"; STFU about how your keeds lahk it. Of course they do! It's a compote of salty, fatty processed foods. And there's nothing noteworthy about "liking cheese." I wonder how quickly those kids are inhaling that pie that they (supposedly) don't notice there are vegetables in there.

You are correct, OP. And it has to be topped with REAL meringue not that whipped cotton stuff. My mom made the best lemon meringue pie, always browning the meringue under the broiler for a minute. Yum!

I love how easy meringue is to make if you have a stand-mixer. Just toss cold egg whites in the bowl with sugar and mix on high until stiff peaks form. (I've never needed to use cream of tartar).

R39, I used Pom Juice instead of lemon juice, thinking it would have a similarly sharp, tart, distinct flavor, but the pomegranate flavor just got lost and muddled. It also came out a very unappealing dull purple color.

I might try again with half-lemon, half-pom, and food coloring.

Lemon Meringue pie is a nice dessert for the Spring (Easter) and Summer. The fall and winter ? That's when you eat Chocolate Cream, Apple, or Fruits of the Forest.

It's my mom's favorite dessert and she always made it when I was a kid. I love lemon-based desserts and baked goods, but lemon meringue pie has never been a favorite of mine. I will eat it, but pretty much only because I enjoy the lemon flavor.

R58, hard to believe it, but Philadelphia is one of the great American culinary cities, with a reputation for fine food that predated the American Revolution. "Philadelphia" brand cream cheese was called that not because it was invented in Philadelphia but because the owners fo the company wanted to stress that a Philadelphia household would deign it worthy of their table.

R55, next time I make a soufflé, I'll post the recipe. It's a shockingly simple one - a matter of paying precise attention to measurements and times. I've only once had a fail.

Unlike my beef stew, which is shoe-leather surprise no matter what I do.

There is something so comforting about a homemade pie. The sloppier the better. I don’t know what it is but pie can instantly soothe me. Just having one around.

But processed pies don’t give me this feeling. Nothing else does but a fresh sloppy pie.

Not a fan of meringue, but I'll eat it if it's "hidden." My favorite lemon pie is Lemon CHIFFON pie. You still have to make a meringue, but it gets folded into the yolk mixture, then it goes into the fully-baked pie shell. The meringue isn't as noticeable( or objectionable IMHO) when the pie is made this way. It is topped with whipped cream, so you do get some of the ethereal quality of the usual, on top meringue.

r46 Lemon Squares are terrific. I like the filling to be very firm, so I use flour plus cornstarch to thicken it. You cannot put too much lemon rind in the filling, AFAIC, and since it usually takes 2 lemons to get 1/2cup of juice, I use the zest from both lemons. VERY tangy.

LMP in diners and restaurants are usually a disappointment, since they are invariably flavored with lemon extract which can be quite harsh.

I am another who dislikes meringue, so I just make it a Lemon Cream Pie instead.

When making cream pies (including chocolate and coconut cream), I find that just plain whipping cream is too light a topping, and often slides out of position on top of the pie. I make it a little more dense by whipping the cream with a small package of cream cheese, some powdered sugar, and a dash of vanilla extract. This topping holds its shape and stays in position, and I think it tastes better too.
