Side dish recipes for a barbeque needed!

My cousins just rented a huge home in Tampa for a week and invited me and my partner. I offered to bring food for the first night as an initial thank you, but am now thinking twice. They are very fussy, so I decided to bring the meat from a local restaurant and to make homemade sides. I was thinking Patti LaBelle's mac & cheese and some vegetarian baked beans, but I need more. They don't care much for veggies and salads, but I need something healthy for me and my partner. There will be ten, at least, to feed.

Anyone have suggestions or recipes they suggest?

BBQ I am assuming ribs, brisket, etc.

If so, Mac and Cheese, Baked Beans, a salad, corn on the cob, coleslaw, watermelon, fried okra, corn salsa, and banana pudding for dessert.

Cornbread - people LOVE cornbread (also make a honey butter).

Potato salad - make sure to include bacon

Tomato and feta salad

7 layer dip - you can make it as healthy or unhealthy as you want.

Homemade pickles- make the refrigerator kind if you cannot can. Sweet and dill/other vegetables.

I should have added that you can completely control the salt. Pickled things do not have to be overly salted.

Hey Op, I've tried this recipe several times for veggie outings. If they like it with meat, they can stick a rib in it.

Just find a good, local BBQ place that has a catering option. Any reputable place, especially since Covid, has meals for 10 or more. Hit up a nice grocery store with prepared sides to supplement if needed. It's a vacation, right? Don't stress.

I'll never understand people who volunteer to make and being all sorts of food on a vacation...and then always seem to regret what they volunteered to do.

I suppose they are people seduced by the glamor if the Tupperware lifestyle.

Since they don't drink, do a big grocery run and load up the refrigerator and kitchen with the drinks and snacks they told you they like, and some bowls if fresh fruit and simple luxuries: nuts, good coffee, bagels, cream cheese, butter, smoked salmon, cheese straws. Go out early one morning and raid a bakery for breakfast: bacon, eggs, pastry, coffee, orange juice.

You don't have to spend a fortune but they did invite you as guests for a week, so if you don't want to treat the house full of people to a dinner at a good restaurant, load up their kitchen and take everyone to the best local place for breakfast or lunch.

I would do that 100x before ska ing away in the kitchen preparing BBQ sides and transporting them and cleaning out the containers and fuck all. It's a vacation.

And don't forget the crudité platter and the arugula pesto! Fussy kids love arugula.

"BBQ Beans": several kinds of canned beans, bacon, ground beef, various spices and seasonings, brown sugar and apple cider vinegar.

Have seen several incarnations of a bacon, sweet corn, cream and cheese dish, all cooked on top of the stove in a cast iron skillet. Chef John over at FoodWishes™ has a good recipe, it's called "Ba'Corn"(IIRC?)

A pot of green beans cooked with bacon, onion and chunked or whole small potatoes is easy and delicious. Just like meemaw used to make.

Roasted potatoes. Either wedges or little quarters. Air fried or baked. No deep frying necessary.
