Bo Derek was IT in the 1980s, but only briefly. Kathleen Turner had a good run from Body Heat to Romancing the Stone, but faded fast.

The 1990s gave us Pam Anderson and Sharon Stone.

Anna Nicole Smith was iconic, but not sure where she fits in. She was certainly larger than life.

Marilyn Monroe was the sex symbol of the 50s not the 60s. The 60s had barely started when she died. I'd say Raquel Welch was the sex symbol of the 60s.
