No love for IHOP?
I go to the VA about an hour away from me for my medical care, and my neighbor and I went together while her husband was there (dying of cancer, RIP), and most times we stopped at the IHOP on the way back.
I love their pancakes! But they're my "desert" after the eggs and home fries/hash browns. Cold glass of milk and I'm good for hours. Yum!

I haven't had pancakes in several years now. My great-grandmother made them for me from scratch, and she always put corn in them. Read commentary re how to substitute milk & lemon juice or white vinegar for the buttermilk.
Suggest you beat the eggs 1st before adding the oil and other ingredients.

Just made another batch of blueberry buttermilk pancakes. Halaved the recipe.
2 T melted butter, 1 well beaten egg, 1 1/4 C of buttermilk, 1 C flour, 1 1/2 T white sugar, 1 t BP, 1/4 t baking soda, pinch of salt, about 1 t vanilla flavoring.
I also add a few drops of almond flavoring. Sometimes I add crushed ameretti cookies instead of the flavorings.
Combine dry ingredients. Beat egg, and add the rest of the wet ingredients. Combine just until moist. Don't overmix. Fry.
They're even better with blueberries.
I've had good luck with freezing and refrigerating leftover cooked pancakes.

I don't remember the exact proportions but she used a can of creamed corn, eggs, flour, and baking powder. Their texture was more like a crepe because it was so eggy, but they were about as thick as a buttermilk pancake. I loved them.

Your batter is too thick. When you add the milk, make the batter a bit thinner because the flour will absorb the milk as it rests. Oh, let the batter rest for a few minutes too. R100's recipe is good but skip the almond stuff and blueberries until you get the hang of it. Also,, up the BP (baking powder) to two teaspoons. Your pan should be heated on medium heat and turn it down if they get brown too quickly. Non-stick pan. Don't use too much butter in the pan.

I think too many people don't understand the variety of pancakes that exist. They think plain and blueberry are all that exist.
In the last year, I've had cinnamon roll pancakes, pumpkin pancakes, strawberry lemonade pancakes, raspberry chiffon pancakes, apple pie pancakes, peach cobbler pancakes, lemon poppyseed pancakes, blueberry lemon pancakes, key lime pie pancakes, peanutbutter pancakes with nutella topping, peanut-butter and banana pancakes, banana cinnamon pancakes...

r132 My grandmother used to make corn fritters using a very thick pancake batter(the Betty Crocker recipe she formerly used was basically that), hers were spherical too, much like hush puppies are.
At a local luncheonette(now sadly closed and much missed), the cook/owner would make me banana walnut pancakes, with both those items inside the cakes, rather than just strewn on top(it makes a big difference) Since he didn't stock either of those things I'd bring a banana and a small bag of chopped walnuts. No snark please, he was a gracious man and very accommodating to his customers. Man, I loved those things.
Met friends for breakfast the other morning and was in the mood for waffles, so I had one with crisp bacon on the side. I usually have savory stuff when I get breakfast out, but these things really hit the spot.
Another great pancake is to lay out on your skillet or griddle already-cooked strips of bacon, then pour the batter over it, so you wind up with an elongated oval.
When I make waffles at home, I put some oatmeal into the batter, bake it crisp throughout, then slather on peanut butter and top it off with berries. Sometimes I fold it in half and eat it like a sandwich, other times a drizzle of Log Cabin syrup(sorry maple only people, I just can't abide the real deal)
