I never heard the word sissel in my life.

Are cold cuts really that unhealthy? I know a few people who've told me they don't eat them for that reason, but they eat other hugely unhealthy things for lunch that have way more calories, sugar etc. A lot of brands are high in salt, but other than that cold cuts are relatively low in calories.

"Nitrate-free" is misleading. They just use nitrates/nitrites naturally found in celery juice or extract instead of chemically-extracted nitrates/nitrites, but it's basically the same thing. "Uncured" ham or bacon is the same misleading labeling.

Yeah it is the salt that is bad for you.
Nitrates preserve the cold cuts as does this salt. Nitrates also give cold cuts much of their distinctive flavor.
A nitrate will meet a protein in the body and combine to form nitrosamines, which are thought to cause cancer.
As another poster stated you can use celery to "cure" meat but it's merely a "natural" nitrate and has the same exact effect when combined with protein.
That said, most people don't consume enough cold cuts to present a risk. The recommended limit is once per week and no deli cured meats for children under 13.

Speaking of “cold cuts,” for some strange reason every time I buy deli ham lately it’s always got gristle or that hard silver shit in the ham and it’s disgusting. Doesn’t matter what brand I get either. I rarely used to have this issue.

Lebanon bologna, either regular or sweet. It's from Lebanon, PA and isn't like regular bologna at all, more like a lacto-fermented salami that's fairly soft.

R43 The bread depends on your mood. Rye with seeds is always a good bet, and cocktail rye is perfect for whipping up fancy tiny sandwiches. Roast beef with horseradish cheddar deserves a puffy kaiser roll. Hoagies are the ultimate cold cut sandwich and they are served on Italian rolls, preferably ones on the softer side like Amoroso's. A nice brioche is right for croques monsieur et madame. The delightful Monte Cristo is best with brioche or sourdough. I'm going to have to stop now as I'm getting really hungry.

I think its because it was never actually marketed outside PA and the Eastern Midwest. Maybe they need a Lebanon Bologna Council of America.

R97 I make a great meatloaf and eat one serving hot out of the oven with mashed potatoes and corn. The rest is devoted to cold meatloaf sandwiches with raw onion and mayo.
