OP I had never heard it until recently but on the news I keep hearing people talking about calling "out" sick.

In Texas you "call in sick," but can also just vaguely say "call out."
"John called in because he has Covid."
"John's not gonna be here, he called out."
You can also say call in without an adjective.
"John called in."

When you notify an employer by phone, the call is going "in" to your boss.
