Yes, I really am. It's so good and has been a few weeks since I made it last.
Now, what type of Mediterranean side dish should I make? I am thinking of making rice since it will absorb all the delicious sauce that this recipe yields.

Yoo hoo Boys
Prune and Cod Stew with Hog Maws
Put a large mess of Prunes in the air fryer. Fry until crisp
Put Hog Maws into pot and fry with onion, garlic, butter, cajun seasoning and 1 jad of molasses
As Hog maws fry
Boil your cod filets in Chicken stock for two hours
Combine all ingredients in big pot.
Add Bottle of cheap BBQ and 1 can of peanuts
Boil covered for six hours on high heat
Serve in big bowls with 3 day old bread
Garnish with Lemon and extra Cod Heads
Enjoy!!!!

An unusual Mediterranean side dish is farro. (Basically, a kind of primitive wheat berry). Delicious cooked with broth and maybe mushrooms, or with butter and parmesan cheese. Needs long cooking though - maybe at least an hour if not pearled, and maybe 25 minutes if pearled. It can be soaked before cooking to shorten cooking time.

Cod and Prune balls in a lovely Tomato sauce
Take your cod and detach heads -save for later
Into a food processor put Cod Fillets & prunes: pulverize
Add six eggs and Pulverize-season with salt and plenty of white pepper
Pour mess into big mixing bowl and add 2 packs of stove top stuffing pork
Add 1/2 bottle of tabasco and stir vigorously
Grease your hands with Lard and form Cod Balls
Fry cod balls in Lard until crispy
Put crispy balls in baking dish, cover with Ragu: the sweetest you can find
Add topping of Greg’s Bechamel with cheddar shreds on top
Bake covered at 350 for six hours.
Garnish with Dill Pickle
Delish!!!

A quick and savory summer repast
Cod Head Salad
Remember the Cod heads I told you to save for later??
Take a bag of American iceberg salad and rinse
Add fresh tomatoes and any other veggies you have around
Pour a bottle of MD20/20 over the salad and a full bottle of olive oil (don’t stint!)
Pour pint of whole milk over salad and toss
Arrange Cod heads on top of salad
Sprinkle with vegan cheddar shreds
Garnish with maraschino cherries
Delish: share with friends!!!!

I used MD 20/20 Golden Pineapple.
I used 2% milk.
I didn't have maraschino cherries, so I used pineapple rings.
SO GOOD! It needs a blanket of béchamel, however, to be able to claim the elusive fourth star.

I like a good pickle on top of some nice Vanilla ice cream or as a lovely edible garnish on cherry pie. Pickles also go great backed in Mac-Cheese. For a quick pick me up, stuff a dill full of chocolate.
