Can I roll it out from scratch and cut it by hand?
Will I only be able to make lasagna sheets and pappardelle?

Yes, you can roll it out. You could probably make fettuccini if you have a steady hand, you can make ravioli. I couldn't make spaghetti, maybe you could.
You could buy a cutter like the one below

if you think you would do it more than once buy something to make it. There is Nothing like homemade pasta. The taste is totally different. If you want to make fettucine I think after you roll the dough out, you can roll it up and then cut thin slices. I have an old Oster mixer that has the attachment to make pasta. It's about 40 years old but I can't give it up because I can also peel and seed my tomatoes with it. My Kitchen Aid mixer has an attachment that you can buy but I am waiting until the Oster dies out.

You can get a chitarra pasta cutter for about $40, which makes a square cut pasta similar to spaghetti and linguine. If you are going to make your own pasta regularly, it would be a worthwhile investment

I came here to mention the Pasta Grannies. They are pretty amazing. Are you making egg pasta or just water. For egg pasta, keep this in mind: the standard recipe is one egg per 100 g of Tipo 00 flour. But our standard large eggs are smaller than the eggs used in Italy. So use extra-large eggs.
