Simple is best: raw with good soy sauce (higeta honzen is excellent) and real grated wasabi (if you have access to a good Japanese market like Mitsuwa).
Tuna tataki (seared tuna with ponzu sauce) is delicious and easy to make. There are tons of recipes online.
