I love throwing a punch of msg into sauces or soups . It seems to punch up the other flavors while reducing the need for salt.

Love it, use it several times a week.
Agree with adding it to stocks. I have made chicken “bone broth” from a roasted chicken carcass including the browned skin, roasted vegetables and fried mirepoix, and even then the batch I made with 1/4 teaspoon MSG was several times better than the one without.

I read that the claim that it was bad was entirely fabricated and at least one goal of the botched studies was harming Chinese restaurants by making them unattractive for westerners. So yes, racism. Of course someone who doesn't like it or just doesn't eat it isn't racist.

I know a woman who swears it gives her migraine headaches and another who says it makes her retain water. I don't know how they could pin down the cause and effect with such precision, so maybe they're just assuming a connection. I like it -- heightens flavor without using salt.

I use Aji No Moto (msg) all the time I’m half Peruvian and everyone uses it there. It’s good on all sorts of things. I always thought the anti MSG thing was complete bullshit. Goya sells something called Sazon in packets which is MSG .

^^The sodium problem is more from common salt than anything. And the addition of other sodium compounds by companies to common salt to increases their pourability since sodium chloride is hygroscopic.

Not wanting to eat Chinese food because you're avoiding MSG is not inherently racist, if you're avoiding MSG in all foods. However, if you're proclaiming "No Chinese food! Too much MSG!" while chowing down on processed foods filled with MSG, it's pretty racist. People will take any opportunity to side-eye and talk shit about ethnic restaurants.

Whiter than snow Eastern Europeans love MSG but are ashamed to admit they use it. I used to use it...makes everything taste better unless you have the endless patience to peel a ton of root veggies and chop them and cook bones, chop onions, fry them...the works. It's hours of work in a teaspoon but it is so much worse for you than making things from scratch.

This article inspired me to go to the Asian market and get some of that umami bomb salt. It is made from salt, MSG, and a touch each of disodium inosinate and disodium guanylate. There are ridiculous people selling small bottles of this salt online for over $30, claiming it's some sort of precious miracle. It is not a miracle substance; it merely makes savory foods taste more savory; and versions of this umami bomb are in all manner of processed foods these days. My Korean-made bag o'salt cost $2.29 for a pound.
