I like white cake with a nice cherry topping. They used to serve it for lunch at school sometimes, and it was the only thing I actually liked. That and the soup.

I love a good carrot cake! I love cream cheese icing on carrot cake, or chocolate, or spice cake. But it works very well with the carrot cake, which isn't very sweet, but which has spice flavor. The frosting adds sweetness and richness, while the cake itself provides flavor and texture, at least in a really good, solid, moist carrot cake.

But of course, my favorite cake is anything that doesn't come from a grocery store bakery with that awful butter-free chemical frosting they use. Ick.

A carrot cake made right can be quite delicious, it isn't my favorite cake, I love, love, love just about any chocolate cake but I can understand people really liking carrot cake. Different strokes for different folks.

Zucchini bread is also quite delicious.

I just had one bite after lunch (a whole slice can last for days). It's that cream cheese frosting and spice combo that makes it so yummy). And then I add a few blueberries, raspberries and banana on a small slice and then microwave it until it all melts together every night with a nice cup of decaf watching The Amercans before bed. Heavenly.

I like carrot cake a lot, with the cream cheese frosting. It's one of the very few desserts I am able to make from scratch.

I put it in the category of zucchini and banana "breads" (they're cakes, really). Out of the three, carrot cake is probably the most popular (as a full-blown dessert) because of the frosting. However, you could put that same frosting on zucchini & banana breads.

Yes, for me, pineapple tidbits and/or pineapple juice makes carrot cake much better!

But many have never heard of this, or scoff at pineapple in carrot cake.

Check the small print on the label of a store bought carrot cake, or a homemade recipe. Often enough, pineapple and/or pineapple juice is listed!

I like pineapple in carrot cake.

I've had beets in chocolate cake. The flavor was undetectable (which is a good thing for a chocolate cake). However, I could detect the texture, which wasn't good. Maybe my friend (who made the beet / choco cake) should have pureed the beets.

R48, I've always used corn oil, in the past. Cakes have come out nicely. However, I recently started using avocado oil as a general cooking oil. It's very neutral-tasting (no avocado flavor) and I would not hesitate to use it in a carrot cake.

R48 Probably Canola (Rapeseed) as it's monounsaturated, but fuck it it's cake. I'd use full fat butter as the carrot will add lots of liquid to help it rise.

Actually, the oil would probably produce a better carrot cake than butter. The oil is in there not for health's sake. Some cakes just work better with oil (than butter).

The frosting part is not "baking." Here's a recipe for cream cheese frosting. Feel free to adjust the sugar.

1 pkg. 8-oz. cream cheese.

1 box (1 lb.) powdered sugar.

1/2 lb. butter.

2 t. vanilla extract.

Also, I'm not even a great baker, but all that BS about how baking is an exact science is BS. People sub-in and sub-out ingredients in recipes (baking) all the time. (Without tragic results.)

R72, try to make the recipe at R82 but only add half the sugar. Then taste it. If it’s not sweet enough then add a quarter cup or so at a time and mix and taste again. Keep repeating until you get the level of sweetness you like. It’s not that difficult. It also helps to sift the powdered sugar before adding to the butter/cream cheese mixture.

I'd rather have pie any day, but carrot cake is OK. I find the frosting to be too sweet for me, so only eat a few bites of it. I do enjoy a good white or chocolate cake. I also love upside down cakes, and horror of horrors, I love fruitcake, but only from the Collin Street Bakery.
