This is because it was originally shot on film, rather than on video (oh, the irony!)
Film masters can easily be re-scanned at hi-def standards, whereas anything originally produced on videotape will always be 525 lines (625 lines in the Eurozone). Oh, and France had 800 line TV in black and white only in the 50's through 70's that still looks really stunning.
One possible exception to the low resolution of old video may come in the form of artificial intelligence based upscaling, which is now in an experimental phase. I suppose this would be a bit like Ted Turner's colorizing old movies.
