Some Food truck are as expensive as a full-on restaurant. Why would anyone deal with long lines, ZERO temperature control, unhygienic food just to get something you can get cheaper at a Chilis?

Food trucks can be grossly over priced in many cases, but I love street food. I don't get your point about this being specifically a white privilege thing. Many ethnicities sell street food. I think the charm of them is similar to going to a festival or carnival or an amusement park.

It is cheaper than a restaurant. You can go where your customers are bc you are mobile. BC it is cheaper, you could spend the money on the food, organic, gluten free flours etc. Small batches means you sell out, or drive them over to a shelter, group home, retirement village.
I like it, if done ethically. It a great avenue for chefs.

There was one at college, I thought the food sucked. I ate it when i had to because it was there most of the night, parked by the dorms. Other kids LOVED it. Loved the food. Especially the Italian food. Is Italian food different in New York than it is in Boston (where I was from)? Or is it just because I'm half Italian and they weren't. No idea why.

I'll take gluten free flours and organic over mass made frozen food with artificial flavoring, any day of the week.
There are plenty of restaurants for you. Food Trucks can be a way for chefs that want to do something different and healthy for customers like me.

Depends what the food truck is selling. It doesn't even have to be a "chef" putting out gourmet food. If I like it, I'll stop and buy it.
However, the hell if I'm going to sit at a picnic table next to the food truck and eat there. I'll take my food to go.
