I'm a big time vegetable lover. I love celery hearts. Especially when I make my homemade pimento cheese and stuff celery stalks. I also love Brussels Sprouts (not Brussel Sprouts). I eat them almost every day. And cauliflower, cabbage, and all the other cruciferous vegetables. i also love roasted carrots.
One of the few vegetables I do not care for is beets, in any form. Fresh, baked, pickeled. They're just a disgusting taste to me.

Celery. It masks everything you put it in. Only time I’ll cook with it is in a mirepoix. Eggplant is fine. Brussels sprouts aren’t bad, but aren’t my favorite. I hate onions and peppers of any sort because I’m very allergic.

eggplant - i hear if you don't press or sweat it, it's practically inedible. that must have been the case the one time my Mom (who was always a great cook) made eggplant parmigiana. you shouldn't have to put that much effort into making something palatable.
beets (golden beets are an exception though, they are tasty). the other kind taste like dirt. if i wanted to eat dirt, i'd eat that instead and it would probably taste better than regular beets.
i love brussels sprouts. i split them open and put a little pat of butter inside. delicious. also good roasted with balsamic vinegar.

R65, they don’t pick, clean, prepare, or cook it properly once you venture north of Louiseville. Outside its use as soup filler, pan-fried okra is a seasonal dish much like roasted corn and tomato sandwiches.
I can get it to taste close to what my mother made because I use our poor people ingredients and possess the correct skillet. My brothers change everything up and then complain that they fail.
Okra and fish patties require more basic flours, spices, and oils. They benefit from hot lard, not bacon grease.

Another vote for both okra and lima beans. Not a fan of arugula either. I've read it can be picked early when it's not bitter, but apparently, that's not been the case whenever I've had it.
I like most everything else.
For the people who hate Brussels sprouts, have you tried them raw and simply shredded-sliced in salads? I think I like them best that way.

R71, I slice them in half, sprinkle with olive oil and salt, and roast them. You can add garlic and parmesan cheese as well. Some people like them roasted with bacon, or balsamic vinegar.
Smaller sprouts are sweeter, so you may want to choose smaller ones.

I love okra in any form. I make okra and tomatoes almost every week, as well as fried okra. But one delicacy I adore is pickled okra. I buy a jar of it in the market every Monday and have 2 or 3 spears with dinner every night. The only bad thing about it is it's not cheap.

My husband cooks Brussels sprouts by slicing them in half, sauteéing them in butter then adding seasonings. They are delicious and not bitter at all. He learned on some YouTube channel that if you cut them in half, they will lose their bitterness in cooking.

My Dad taught me how to cook eggplant. Peel it, slice it about 1/2 inch thick, dip it in egg then in flour, fry flat in a pan, with a bit of oil in the pan, for a few minutes on each side, just until crispy, drain on paper towels, then season. I use the seasoning called "Spike." Delicious!

Brussels sprouts can be a bit dicey. Sometimes they have a pleasant mild flavor, sometimes they taste like they've been soaked in iodine. My favorite way to cook them is to trim and rinse them, give them six minutes in the microwave, and serve dressed with olive oil, a little garlic salt and Parmesan.
The only vegetable I fear is polk salad, but I'm a Yankee.

Celery = great raw and stuffed. Essential for stews and dressings.
Carrot = carrot juice is great. Love carrot cake. Good in coleslaw. Another good stew/soup ingredient. Essential in coq au vin.
Eggplant = love parmigiana and baba ghanoush.
Brussel sprouts - love them but have trouble cooking them - tend to order them when out.
Potatoes = I fail to see how anyone could dislike potatoes in some form or another.
Turnips = DING DING DING THE WINNER
Collard greens = not much experience with these.
Seaweed = delicious with sushi
Spinach = great raw, wilted, creamed or in pies and quiches.
