"Smooth Talk" from 1985 has some of the best mall sequences ever. "Fast Times at Ridgemont High" and "Valley Girl" are pretty great for this too. As far as horror goes, "Chopping Mall" and "The Initiation" also come to mind.

Hah, r3! I was about to mention Scenes from a Mall. I saw it in a theater when it first came out. Fill wall to wall with the most BORING and inane dialogue that was meant to be funny and "insightful." I didn't laugh once.

Night of the Comet has some great mall scenes, too.
Kindergarten Cop has a great opening inside of a mall as well and, every time I see it, I'm immediately taken back to that late 80's/early 90's mall culture. It was huge back then and that's where everyone went on the weekends.
