What your favorite type of cake?

My partner has such a vanilla palette. He always opts for white cake with white frosting—yuck.

My fav is German chocolate with its coconut and nut frosting. It’s tough to find so I figure it’s complicated to make.

OP, there's a great recipe for German Chocolate Cake in the 1997 edition of Joy of Cooking, by Ethan Becker. I like to bake, so I don't consider it complicated to make.

The original Silver Palate Cookbook has a recipe for carrot cake I've used a lot and people have liked. It's a bit controversial, though, as it uses pineapple and coconut.

Cheesecake? It's neither cheese nor cake. Can't stand that pasty texture.

I make a great carrot cake with cream cheese frosting. Sometimes I put raisins in the cake batter but then it tastes more like a spice cake. I think the cream cheese frosting is what makes the cake!

On a related note - when I first moved to DC, and joined a gay social group, we had a "meetup." We were to bring cakes/pies. I was told by numerous people that this particular man's Carrot Cake was THE BEST EVER. So, naturally, I was excited. When the cake eating began, I tried the carrot cake - it was HORRIBLE. As I was taking my first bite, a few of the guys were staring at me. I didn't know that it was a prank. These guys had always been super nice to this older gentleman, telling him how great his carrot cake was when, in fact, they all hated it. I took a few bites, then secretly put the rest into a napkin, and hid it at the bottom of the trash can. The carrot-cake gentleman is very nice, and the host of the event, so no one wants to hurt his feelings.

I’m pretty basic in cake choices. Vanilla, chocolate, marble. Grew up in the 70s with plenty of Betty Crocker and Duncan Hines box mixes. Not a big fan of cheesecake. My mom used to make my dad a carrot cake for his birthday but I remember it was a lot more work than her other baked goods.

R45, yes, those cakes tend to have frosting and filling of whipped cream or something lighter than buttercream. Perhaps custard on the inside. And you'll have sliced strawberries, or pineapple, whatever, within. If you like light cakes, you'd like that.

I like carrot cake, but it's in a different class, along with banana "bread" and zucchini "bread" and even fruitcake. The only difference is that CC has the cream cheese frosting, which I like.

Cheesecake is not really comparable.

My favorite cake is an Italian one popular in Naples. It's called migliaccio, and is a lemon-ricotta cheese and semolina cake. Absolutely scrumptious. One bite and I'm dreaming of halcyon days on the Amalfi coast.

I love vanilla too, OP, and those Pepperidge Farm cakes in the freezer section are all to die for, even the flavors besides vanilla.

As for cakes from scratch, I had a piece of birthday cake a few weeks ago that was a moist, vanilla - almond flavored cake filled with cannoli cream. Heavens to Betsy, it was so good my knees shook. Also, any cake with cream cheese frosting, caramel or white chocolate blows my mind. as long as the cake is moist and fluffy.

The person who mentioned cannoli cake above is correct. Amazing.

Carrot cake is great, but it's one of those things that has to be high-quality to really be enjoyable. You can get away with a cheap chocolate or vanilla cake that will still taste good, but I've never found that to be the case with carrot cake.

My grandmother had a chocolate caramel layer cake recipe that is still probably my favorite cake I've ever had. It's two layers of German chocolate cake, with a caramel filling with chocolate chips and walnuts in the middle. You bake the first layer, then cover it with the caramel, chocolate chips, and walnuts, add the second layer of cake batter, and bake again. When it cools, the chocolate chips harden and give the caramel layer a bit more texture (along with the walnuts). The frosting that goes on it is made out of whipped cream and vanilla Jello pudding mix. I've made it a few times over the years and never received anything but compliments. It's great, but too decadent. I avoid making it for this reason.

Used to love the cheesecake at Il Fornaio. Since I came to Romania, before the pandemic, the fraus at work made crazy good Dobos torte and a local type of doughnut where the dough is made with sweet cheese and then it is deep fried, covered with the doughnut hole and sweet sour cream is the topping with boysenberry syrup drizzled on top.

There is a small restaurant chain in Southern California with locations around Washington DC called Urban Plates. They make a cake that is amazing and it’s called apple cake with caramel buttercream. I had it for the first time two years ago and can’t stop thinking about it! I’ve probably had it six times since then and it’s still one of my top favorite cakes. I think they only have it during the fall. I wish I could make it at home!

R84- That actually looks REALLY good. One of the best cakes I have eaten (the actual cake) was "Alma Hackney's Rum Cake" from Red Truck Bakery.

The cake was so moist, dense, and delicious.

I am not a fan of alcohol in any desserts, but in this case, it was INSANE. And you do not detect any alcohol.

(Unlike Bourbon Vanilla Ice Cream- I cannot stomach that)

I used to make a cake from an old McCall's cookbook of my mother's. It's called PERFECT CHOCOLATE CAKE. It's a TRIPLE layer cake with chocolate butter cream frosting on the sides and top, but between the layers is WHIPPED CREAM. That was a FABULOUS cake. I haven't made it for over 20 years. I first made it back in 1989.

In the 1980's and 1990's I would go to the supermarket and buy Oregon Farms Carrot Cake. It was a frozen cake but VERY good quality. Unfortunately I haven't seen that cake in at least 20 years.

I used to make a FABULOUS Black Forest Cake from a book called- The Southern Foods Cookbook. Back in 1988 my brother and I went to a bookstore one day and he ended up buying that book (at my prodding). This recipe did not use KIRSCH which was good since I don't like my deserts SOAKED in booze.

A chocolate cake with whipped cream and cherries - it was SCRUMPTIOUS( what a GAY word. But that's okay because I'm GAY)

R132- Trader Joe's doesn't sell that Carrot Cake anymore. If you're talking about the TJ's frozen CC- it was NOT good. Oregon Farms was FAR better.

What does white cake taste like? As a child, I always marveled at the white cake mixes in the store and couldn’t imagine what they tasted like—flavorless? Bitter? The golden or yellow cakes seemed to have the flavor that I would imagine a white cake would have, in the sense that they were fairly plain and just tasted like butter, eggs, and sugar. To this day I don’t think I’ve had a white cake!

I also don’t know if I’ve ever had vanilla cake.

My favorite cake is chocolate sour cream. The batter just has sour cream in it, which adds moisture. It’s a round layer cake with chocolate (or fudge) buttercream frosting.

R145, the best pancakes are “Giant Sunday Pancakes”—Google that recipe. You just have to reduce the amount of sugar in the mix by AT LEAST HALF (it’s appalling how much the recipe calls for).

I think white cake is made the same way as yellow except that you omit the egg yolks.

Sorry, R151, after I posted that I realized it was very unclear. I meant to say that the sour cream is just an ingredient in the batter, the cake doesn’t taste like sour cream, and it doesn’t have a gooey sour cream center or anything like that.

I love this carrot cake recipe. I'm a whore for cream cheese frosting and I don't put it on this cake because it doesn't need it. Sometimes I'll do an orange glaze if I'm feeling fancy.

My favourite cake is made by a German bakery here. It’s a modified Furst Puckler cake, with a pie crust bottom layer, 3 alternating layers each of buttercream and cake (white and chocolate), a layer of marzipan, and then covered in chocolate.

I don’t normally like marzipan, but it makes this cake.

Welsh Seedcake. A rich, dense poundcake that includes caraway seeds and chopped, candied orange peel( the real stuff that is meant to be eaten like candy, not the fruitcake ingredient)

Maida Heatter's Chocolate Sour Cream Cake layered with Julia Child's Chocolate Mousse, frosted in REAL chocolate buttercream frosting. Worth every calorie.

Another vote for Spanish Bar Cake.

My mom makes Spanish Bar Cake from scratch. I've never tasted the A & P version, but I guarantee it probably doesn't even come close.

The carrot cake is also homemade, a carrot spice cake with a cream cheese frosting, topped with walnuts.
