OP, there's a great recipe for German Chocolate Cake in the 1997 edition of Joy of Cooking, by Ethan Becker. I like to bake, so I don't consider it complicated to make.
The original Silver Palate Cookbook has a recipe for carrot cake I've used a lot and people have liked. It's a bit controversial, though, as it uses pineapple and coconut.
Cheesecake? It's neither cheese nor cake. Can't stand that pasty texture.

On a related note - when I first moved to DC, and joined a gay social group, we had a "meetup." We were to bring cakes/pies. I was told by numerous people that this particular man's Carrot Cake was THE BEST EVER. So, naturally, I was excited. When the cake eating began, I tried the carrot cake - it was HORRIBLE. As I was taking my first bite, a few of the guys were staring at me. I didn't know that it was a prank. These guys had always been super nice to this older gentleman, telling him how great his carrot cake was when, in fact, they all hated it. I took a few bites, then secretly put the rest into a napkin, and hid it at the bottom of the trash can. The carrot-cake gentleman is very nice, and the host of the event, so no one wants to hurt his feelings.

I love vanilla too, OP, and those Pepperidge Farm cakes in the freezer section are all to die for, even the flavors besides vanilla.
As for cakes from scratch, I had a piece of birthday cake a few weeks ago that was a moist, vanilla - almond flavored cake filled with cannoli cream. Heavens to Betsy, it was so good my knees shook. Also, any cake with cream cheese frosting, caramel or white chocolate blows my mind. as long as the cake is moist and fluffy.

Carrot cake is great, but it's one of those things that has to be high-quality to really be enjoyable. You can get away with a cheap chocolate or vanilla cake that will still taste good, but I've never found that to be the case with carrot cake.
My grandmother had a chocolate caramel layer cake recipe that is still probably my favorite cake I've ever had. It's two layers of German chocolate cake, with a caramel filling with chocolate chips and walnuts in the middle. You bake the first layer, then cover it with the caramel, chocolate chips, and walnuts, add the second layer of cake batter, and bake again. When it cools, the chocolate chips harden and give the caramel layer a bit more texture (along with the walnuts). The frosting that goes on it is made out of whipped cream and vanilla Jello pudding mix. I've made it a few times over the years and never received anything but compliments. It's great, but too decadent. I avoid making it for this reason.

There is a small restaurant chain in Southern California with locations around Washington DC called Urban Plates. They make a cake that is amazing and it’s called apple cake with caramel buttercream. I had it for the first time two years ago and can’t stop thinking about it! I’ve probably had it six times since then and it’s still one of my top favorite cakes. I think they only have it during the fall. I wish I could make it at home!

The cake was so moist, dense, and delicious.

I used to make a FABULOUS Black Forest Cake from a book called- The Southern Foods Cookbook. Back in 1988 my brother and I went to a bookstore one day and he ended up buying that book (at my prodding). This recipe did not use KIRSCH which was good since I don't like my deserts SOAKED in booze.

What does white cake taste like? As a child, I always marveled at the white cake mixes in the store and couldn’t imagine what they tasted like—flavorless? Bitter? The golden or yellow cakes seemed to have the flavor that I would imagine a white cake would have, in the sense that they were fairly plain and just tasted like butter, eggs, and sugar. To this day I don’t think I’ve had a white cake!
I also don’t know if I’ve ever had vanilla cake.
My favorite cake is chocolate sour cream. The batter just has sour cream in it, which adds moisture. It’s a round layer cake with chocolate (or fudge) buttercream frosting.

My favourite cake is made by a German bakery here. It’s a modified Furst Puckler cake, with a pie crust bottom layer, 3 alternating layers each of buttercream and cake (white and chocolate), a layer of marzipan, and then covered in chocolate.
I don’t normally like marzipan, but it makes this cake.

Welsh Seedcake. A rich, dense poundcake that includes caraway seeds and chopped, candied orange peel( the real stuff that is meant to be eaten like candy, not the fruitcake ingredient)
Maida Heatter's Chocolate Sour Cream Cake layered with Julia Child's Chocolate Mousse, frosted in REAL chocolate buttercream frosting. Worth every calorie.

My mom makes Spanish Bar Cake from scratch. I've never tasted the A & P version, but I guarantee it probably doesn't even come close.
The carrot cake is also homemade, a carrot spice cake with a cream cheese frosting, topped with walnuts.
