I use both interchangeably, but there are certain things I will be more likely to use one in than another, like lime in guacamole. They really are an excellent, yet simple way of making a dish that is otherwise bland become exciting.

Lime gives some depth to poultry while lemon seems to sit on top if that makes sense. Lemon is better for salmon, but I prefer vinegar.

Mmm, R14. I'm so partial to vinegar. Growing up when we had fish and chips I would always use malt vinegar on them. It wasn't until I was an adult that I found out nearly every other kid grew up putting tomato sauce on theirs. I still prefer my way.

It’s sold in the US. Odwalla was available locally until they went belly up due to covid.
Adding lemon juice to pastry flour makes a decent vegan cake. It’s not what I’m aiming for, but it uses up pastry flour.

MinuteMaid used to sell frozen lemon juice, but I haven't seen it in years. You can freeze your own, though. That's what I do when I have extra lemons.

Lemons are less sweet and are therefore more versatile, and go in a lot of savory dishes. Lemons go better with chicken and fish than limes do, and can go over vegetables in sauces like lemon butter, or be part of a salad dressing.
Limes (and oranges) are mainly used for sweet dishes.

I once went to lunch at a pretentious queen's house. He had cooked Thai food. He was an unbearable know it all, and kept going on about how everything he did was perfect and with the perfect amount of detail.
One of the other guests, who was as annoyed as I was by then, mentioned very calmly that she was surprised that given his attention to detail, the Thai dishes he had prepared were supposed to use lime and not lemon like he had. Pretentious Queen threw a hissy fit that was hilarious to watch.

I remember reading once as a kid that Meyer lemons were so sweet you could make lemonade out of them without any processed sugar. We didn't have them when i was growing up in the Midwest in the 70s and 80s so I couldn't try it out. Then I finally tried lemonade made out of Meyer lemons and no sugar finally as an adult when I moved to the West Coast, and it was hugely disappointing--it was not sweet enough.
Now, however, I consume so little sugar I would probably appreciate it.
