Chicken salad

It gets no respect. It's like tuna salad's embarrassing cousin.

I think this is true, but I don't understand why.

It's so much better tasting and superior in consistency to tuna salad.

Maybe just because tuna is cheaper and easier for salad-making?

r1 That's part of the reason. Many people have a can or two of tuna in the cupboard, so it's a quick, last minute throw-together. A bit of mayo or V&O, S&P, stir it with a fork, Boom! You're done. If you want chicken salad you sorta' have to plan ahead: poach or bake some chicken parts; or remember to get a rotisserie chicken at the supermarket; figure out what else to put in it; chopping, slicing, dicing, et al.

I'm still stuck in the 70's, 80's(?) I like my chicken salad with homemade mayo, a dash of curry powder, some pecans and sliced scallions(or better yet, shallots when making the mayo). Served on a chall-ette, it's one terrific sandwich.

There's an old food standby here in Philly, chicken salad severed with fried oysters. One compliments, and complements, the other: hot, cold, smooth, crispy, tangy, mellow, sweet, briny. Try it some time.

I like chicken salad. My favorite is Chicken, pineapple chunks, toasted almonds, mayo, S&P. simple but delicious. My mom used to make it when I was a kid with left over chicken. I make it now sometimes with leftover chicken other times I bake some especially with it in mind.

So many weird ingredients listed here - celery, red onion, diced tomato and hard boiled eggs with mayo, sandwich spread, sweet relish and a bit of mustard and you're good to go. No nuts, raisins, seafood etc.

I don't eat meat anymore, but I would agree a chicken salad is superior to a tuna one. In fact, I don't think I've ever eaten a tuna salad, but chicken salad was quite common when I was growing up as a child.

No raisins, though. Seriously, people who sneak raisins into food deserve the worst punishment imaginable. Eugh!

I love it. I make a curry chicken salad with golden raisins and apple that I love. I also make one with slivered almonds, fresh thyme, and raisins that's delicious. I put some onion and celery in both, and add a tablespoon or so of brown mustard to the thyme one. I use half plain yogurt and half mayonnaise. Both are great summer salads.

There used to be a shop on Greenwich Street (I think) called Taylor's, that made the best chicken salad. It was mayonnaise-based (maybe some sour cream) and it had grapes, sliced almonds, and plenty of fresh dill.

When I make it, I poach bone-in/skin-on chicken breasts. I remove them from the poaching liquid when they've just cooked through, and when they're cool enough, I tear them apart by hand to create random shreds and chunks.

I mix that with either a mustardy vinaigrette or a mixture of sour cream and mayo. Any of these things could be added: curry powder (tempered in hot oil) and mango chutney, grapes, scallions, dill, tarragon, basil, thyme, garlic, red peppers (roasted or raw), celery, different nuts.

The best chicken salad recipe I've had is one with Craisins and fresh tarragon. Tastes like Thanksgiving but it's very good.

Always prefer chicken salad (not too herby, and no fruit; just salt and pepper and good chicken)—although will admit to [italic]loving[/italic] (and recently making) my mom's old tuna melt, From some long-ago NYC luncheonette when she was a teenager.: a toasted English muffin, topped with tuna salad, a ring of canned pineapple (trash), and a slice of American, all warmed under the broiler. It's amazing.

Ham salad is a southern thing and not actually made from ham. It's shredded baloney with mayo and pickle relish. I grew up in the south and wouldn't touch the stuff.

I don't mind eating raisins, but I don't put them in food I'm serving to company. Lots of people dislike them. Also: mushrooms, raw onions, jalapenos, hard-boiled eggs.

IMO, raisins are OK if you make the salad mixture and serve it right away, when the raisins are still dry and chewy. But raisins will eventually soak up a lot of moisture and have an "old grape" texture & flavor. Don't know if craisins do the same thing.

I don't like raisins in baked goods b/c of how they plump up and are like grapes again.

I'm having the one I made a couple of days ago for dinner tonight. I use chicken tenders so the meat is really tender. I just add mayo, celery and shallot. That's it. I get at least 4 portions out of that pack of tenders. A few crackers and boom, I have a meal. Actually I had planned on making ribs tonight but when I opened them to let them to let the salt sink in a little they stunk to the high heavens. Heritage pork from my food coop that I paid so much for and they were spoiled rotten, btw, still had almost a week to go on the expiration date. I called. They are going to return my money on my next order. They offered very quickly. I have a feeling I'm not the only one who complained about rotten ribs in the last few days.

All you really need is mayo and chicken breast. A little dijon mustard, celery & onions (preferable green) are recommended. The only acceptable fruit is some diced apple.

There is an Italian deli in Chicago called L'Appetito that has the best chicken salad on earth! They used to be in the basement of the Hancock building, but now they're at the corner of Huron and Wabash. They have a couple of other locations, but alas, the one in Boystown is closed.

I was born and raised in the south. Ham salad is made with ham. I’ve never had bologna salad. I had never even heard of it; until someone posted that Simply Sarah recipe.

Last time we had the chicken salad discussion, I naively posted my favorite chicken salad recipe which is Pioneer Woman's.

I was not prepared for the vitriol spewed my direction because the recipe includes brown sugar.

Lesson learned and your loss DL, it's really good and sounds similar to what r21 mentions with sour cream.

Miss Leslie Jordan has been singing the praises of chicken salad on his viral Instagram lockdown videos for the past year.

He seems too use a lot of hard boiled egg in his, which makes it look like some chicken salad/egg salad Frankenstein hybrid.

He also adds a touch of pickle juice (the bread and butter variety).

You can go to any upscale super market like Sprouts and find chilled prepared pulled chicken, likely from rotisserie they roasted previously. Just add ayo, carrot and apple shards.

R74, I don't mind the fruity ones. If I get one, it's usually the one with grapes, apples and pineapples. Or the one with dried cranberries and almonds. They used to have one with pineapples and macadamia nuts that I really liked too. But I prefer the savory ones.

I broil/roast two large bone-in breasts, lately a favorite being those rubbed with a honey-bbq spice mix in the store so they've sort of marinated by the time you cook 'em. There are no gristley bits if you cut or tear the meat up yourself when it cools. I like it curried, I love it curried with golden raisins and apples, and I like it with grapes, too, but usually it's just the chicken, some lemon juice, some finely chopped celery, a little celery salt and of course, Hellman's mayonnaise.

Served on a toasted brioche roll with some greens, a slice of tomato and a couple of strips of crisp bacon - it's heaven in your hands.
