I think this is true, but I don't understand why.
It's so much better tasting and superior in consistency to tuna salad.

r1 That's part of the reason. Many people have a can or two of tuna in the cupboard, so it's a quick, last minute throw-together. A bit of mayo or V&O, S&P, stir it with a fork, Boom! You're done. If you want chicken salad you sorta' have to plan ahead: poach or bake some chicken parts; or remember to get a rotisserie chicken at the supermarket; figure out what else to put in it; chopping, slicing, dicing, et al.
I'm still stuck in the 70's, 80's(?) I like my chicken salad with homemade mayo, a dash of curry powder, some pecans and sliced scallions(or better yet, shallots when making the mayo). Served on a chall-ette, it's one terrific sandwich.
There's an old food standby here in Philly, chicken salad severed with fried oysters. One compliments, and complements, the other: hot, cold, smooth, crispy, tangy, mellow, sweet, briny. Try it some time.

I like chicken salad. My favorite is Chicken, pineapple chunks, toasted almonds, mayo, S&P. simple but delicious. My mom used to make it when I was a kid with left over chicken. I make it now sometimes with leftover chicken other times I bake some especially with it in mind.

I don't eat meat anymore, but I would agree a chicken salad is superior to a tuna one. In fact, I don't think I've ever eaten a tuna salad, but chicken salad was quite common when I was growing up as a child.
No raisins, though. Seriously, people who sneak raisins into food deserve the worst punishment imaginable. Eugh!

I love it. I make a curry chicken salad with golden raisins and apple that I love. I also make one with slivered almonds, fresh thyme, and raisins that's delicious. I put some onion and celery in both, and add a tablespoon or so of brown mustard to the thyme one. I use half plain yogurt and half mayonnaise. Both are great summer salads.

There used to be a shop on Greenwich Street (I think) called Taylor's, that made the best chicken salad. It was mayonnaise-based (maybe some sour cream) and it had grapes, sliced almonds, and plenty of fresh dill.
When I make it, I poach bone-in/skin-on chicken breasts. I remove them from the poaching liquid when they've just cooked through, and when they're cool enough, I tear them apart by hand to create random shreds and chunks.
I mix that with either a mustardy vinaigrette or a mixture of sour cream and mayo. Any of these things could be added: curry powder (tempered in hot oil) and mango chutney, grapes, scallions, dill, tarragon, basil, thyme, garlic, red peppers (roasted or raw), celery, different nuts.

IMO, raisins are OK if you make the salad mixture and serve it right away, when the raisins are still dry and chewy. But raisins will eventually soak up a lot of moisture and have an "old grape" texture & flavor. Don't know if craisins do the same thing.
I don't like raisins in baked goods b/c of how they plump up and are like grapes again.

I'm having the one I made a couple of days ago for dinner tonight. I use chicken tenders so the meat is really tender. I just add mayo, celery and shallot. That's it. I get at least 4 portions out of that pack of tenders. A few crackers and boom, I have a meal. Actually I had planned on making ribs tonight but when I opened them to let them to let the salt sink in a little they stunk to the high heavens. Heritage pork from my food coop that I paid so much for and they were spoiled rotten, btw, still had almost a week to go on the expiration date. I called. They are going to return my money on my next order. They offered very quickly. I have a feeling I'm not the only one who complained about rotten ribs in the last few days.

There is an Italian deli in Chicago called L'Appetito that has the best chicken salad on earth! They used to be in the basement of the Hancock building, but now they're at the corner of Huron and Wabash. They have a couple of other locations, but alas, the one in Boystown is closed.

I broil/roast two large bone-in breasts, lately a favorite being those rubbed with a honey-bbq spice mix in the store so they've sort of marinated by the time you cook 'em. There are no gristley bits if you cut or tear the meat up yourself when it cools. I like it curried, I love it curried with golden raisins and apples, and I like it with grapes, too, but usually it's just the chicken, some lemon juice, some finely chopped celery, a little celery salt and of course, Hellman's mayonnaise.
Served on a toasted brioche roll with some greens, a slice of tomato and a couple of strips of crisp bacon - it's heaven in your hands.
