If you ever get a chance, try a "smothered" burrito. Your choice on what's inside the burrito. (I like black beans, shredded beef or seafood.) It's the sauce or the gravy that makes it good. It's in the comfort food category, IMO.

Taco Bell actually tried opening restaurants in Mexico. They were a miserable failure, perhaps because the few Mexicans who tried their pseudo-Mexican food got lava-like shits.

It's a lot of the same basic ingredients, prepared or arranged in different ways.
Carne Asada is marinated beef.
Machaca is meat chopped up or shredded. Chicken, beef or pork chopped up.
Pico de gallo is like a little bit of strong salsa which is used as a topping.
To the best of my knowledge, abobada and al pastor are the same thing - pork roasted on a spit and carved off and spiced.
Crema is sort of like smooth sour cream.
Queso is cheese. Quesadilla is cheese melted in a tortilla.
Cochinita is a pork dish, traditionally young pork, braised in seasonings, traditionally in a banana leaf.
Guacamole is a dip or spread made from mashed avocadoes. Aguacate = avocado.
Tostada is a flat round corn tortilla, fried to a crisp and topped eith the same ingredients that might go into a taco.
Enchilada is a corn tortilla rolled up with a filling and then baked, usually a bunch of them in a tray, wirh sauce all over them. Usually a red sauce, but green in "enchiladas verdes."
Sopapilla is made by taking pieces of dough and frying them in oil, then coating or topping them with something, usually sweet.
Tamales are made of masa (corn meal) and are filled with something in the center (a little meat usually), wrapped in a corn husk, and then a bunch of them steamed in a big pot. Served with some kind of sauce.
Moles are various combination sauces made in a pot, sometimes with as many as 50 ingredients, often including unsweetened chocolate as one of the ingredients. It becomes a sauce for meat, or chunks of meat might be mixed in with it.
"Mole" in general can mean a number of different types of mixtures. "Guacamole" thus comes from the words "aguacate" and "mole."
Frijoles is beans, most commonly the mashed "refried" pinto beans.
Ranchera in general terms means country style or ranch style. Specifically, Ranchera sauce is made with tomatoes, onions, chiles and other seasonings. Huevos Rancheros is fried eggs served on top of tortillas, then topped with Ranchera sauce.
Sopa is soup, but caldo is a big bowl of soup with other things added. Caldo de Res = beef. Caldo de Pollo = chicken. Caldo de Camarones = shrimp, and so on.
