I love her, but she’s quirky, typecast and (not her fault) dated. She followed Jim Carrey’s trajectory that the audience’s perception of her outshines any potential for a new role.
She also isn’t getting any younger and couldn’t keep playing the same youngish parts.
I’d love to see her do some modern remake of Shakespeare with a meaty part in a gender bending or time traveling role, something wildly unexpected.

Before I completely gave up on cable 5 years ago, the last movie to be categorized as "If it's airing, I'll probably watch it," was "The Other Woman." Even in her shittiest films Cameron managed to rise above the material. However, her schtick was sexy and quirky, which doesn't translate well into one's 40s and 50s. Good for her, quitting while she was ahead.

I suspect it’s more about Hollywood quitting Cameron than the other way around. Hollywood is obsessed with female youth and the money it brings. She aged out and couldn’t compete with the newer, shinier starlets that were promoted. Another major reason was that movie audiences probably lost interest.
This is what happened to Gwyneth. She didn’t decide that being a snake oil peddler was more fulfilling. Nobody wanted to watch her pretentious, desiccated face on the big screen anymore.

What ultimately matters is if an actor/actress can put asses in movie theater seats. It's a business first and foremost. The U.S. and its dream factory (Hollywood) are fixated on female youth. That's always been a major draw for the public. Hell, we have pervs here that can't wait for some starlet to turn 18. The regular pattern is that established actresses with fading looks lose out to younger up-and-comers. There are exceptions like Meryl Streep and Helen Mirren.
Look at the UK and French film industries. Older actresses still get work. The French view older women as desirable. Hollywood producers, meanwhile, still cast women based on their youthful fuckability.

Diaz is a fun actress who was willing to take chances and offered a variety of characterisations in good films like My Best Friend's Wedding and Being John Malkovich. She's quite convincing and entertaining as the obsessed ex in Vanilla Sky. In some respects, she was underrated as you can see from some of the comments here dismissing or minimising her talent. One of my favourite performances of 2011 is her comical turn in Bad Teacher. I liked her in The Counselor as well and In Her Shoes.
She found a man who loves her and she loves him. She's a mother. I think she's happy now. Good for her.

Those other actresses you mentioned at R39 are still working because of one or a combination of reasons:
A) They've aged better than Cameron (Banks, Fisher, Hendricks). Far better, in this case.
B) The public is willing to pay to see their films or regularly watch their TV shows (Jolie and Theron, Hendricks for the latter).
C) They've won Oscars or have been nominated several times. Thus, they're considered consistent. (Adams, Theron, Chastain).

I think the mainstream audience put her in that old fashioned sex bomb / starlet mold and couldn't deal with her doing anything but that. And I don't think Cameron bothered doing what, say, Drew Barrymore and Reese Witherspoon do by starting their own production companies and release smaller scale movies or TV shows with them.
And then look at someone like quirky Allison Janney, who does fairly well with being typecast as complicated mother (Mom, Struck by Lightning, Tonya) and the occasional gem like Bad Education.
