Homemade vegetable/ seasoned tofu pad thai, extra spicy. Fresh mango for dessert. After that I plan to watch my new kitten who I had for 1 week interact with my cat. So far so good, today is the first day that they've interacted and my cat has only play swatted him once. This was after she growled at me and hissed at him after I brought him home last Saturday. I got up early this morning and made a beautiful cherry cheesecake. After that started baking, I made a spicy bbq marinade and put some wings in it and they are cooking now and smell like Heaven. I had an outpatient therapy session today at the hospital, and they fed us reasonably correct grilled cheese sandwiches. I find those pretty filling, so I made a smoothie for dinner, since I'm trying to use up the enormous supply of smoothie base my hospital gave me before surgery earlier this year. I added powdered ginger tea, powdered peanut butter, and a huge scoop of Hershey's cocoa, and it was quite good. I have to consume food in combination with one of my prescriptions, and I figured that covered that requirement. I can't wait to buy a new refrigerator soon so I can once again enjoy fresh foods.

Yesterday I got bacalao asado from a local Spanish restaurant, along with chicken soup. There was so much - they also threw in a couple of pieces of bread - I'll have enough for two more meals.
I also ordered 3 empanadillas - one each of chicken, beef & bacalao - to stick in the freezer and cook in the toaster oven for the future use.

Their food is delicious when it is hot and fresh, and Iâm hungry; but after Iâve eaten, or after itâs cooled, it smells pretty gross. R59 itâs a basic recipe I have in my head. I make sautĂ©ed mushrooms with what ingredients I like and what I have on hand.
This serves 2. I sautĂ©ed 1.5 cups sliced mushrooms with 1 Tbsp butter and 1 Tbsp olive oil, added 1 tsp of Worcestershire sauce, 1 Tbsp of steak sauce (add more to taste), sautĂ©ed them some more (you may need to add more butter at this point), added maybe a quarter cup of Marsala wine, let that simmer for a few minutes and reduce, when youâre close to being done then I add minced garlic and cook for about a minute because I like garlic with some bite. I also add pepper, maybe some creole seasoning if I want a little kick. At the very end of the recipe I add about a tablespoon of heavy cream and stir it. Also, give it a little taste to see if it needs any additional ingredients. Then I add fresh chopped tarragon and stir once again and then serve. Make sure you add tarragon at the very end it doesnât need to be cooked long at all maybe 15 seconds. Hopefully you like it!

I'm cleaning out my freezer. I found four boneless, skinless chicken breasts. Poached two - one for chicken salad, the other for chicken tacos or enchiladas tomorrow. The other two - made into parmesan-crusted cutlets. Served with homemade potato salad (had to use up some potatoes that were going bad) and for dessert - banana-nut bread (also from the freezer) with cream cheese. The freezer is still pretty full. I think there's a brisket in there I was planning to smoke.

r93 I used to make it as thick as mashed potatoes, it is much more liquid now(I feel the flavors come through better this way). From what I've seen and read, the thinner style seems to be traditional and more preferred. As you grind up the cooked chickpeas you can tell they are exceptionally dry-textured. For 2-16oz cans of chick peas I use the juice(and zest) of one lemon, 2/3 cup of water and approx. 2 Tbsps. olive oil(plus Worchestershire and Tabasco sauces, to taste). One of the reasons I have to add so much water is because the tahini I use is the consistency of Cheddar cheese, I have to cut it with a knife(some tahini is so liquid you can pour it out of its jar) If you cook your own chickpeas, they will be more moist, so you'll have to adjust the liquids accordingly.
It can be any consistency you wish since you'll be the one making it.

Just realized I left out many of the seasonings I use when I make hummus. These are all to taste:
Either fresh garlic, minced and sautéed in some of the olive oil you'll be using, for 60 seconds, or, garlic powder "bloomed" in the lemon juice you'll be using.
Curry powder, ground cumin, onion powder, black and white pepper, dried dill weed or Summer savory. Don't add so much that you can identify the taste of any of them, these are merely in support of the dominant flavors of garlic and lemon.
Remember: once you've made it, it will thicken up a bit once it's been refrigerated.

I grew up on Swiss Steak. Unfortunately I haven't been able to eat meat for over 30 years. Swiss Steak is one of the dishes I miss the most.
I remember watching it being prepared as a child. I was taught it's very important to beat the flour into the round steak when you're tenderizing it rather than dredging the steak in flour after you've tenderized it, otherwise most of the crust will slide off when you're frying it and you'll end up with a thin sauce.

I was able for the first time in months to go to my favorite Mexican restaurant and eat on the patio. The server welcomed me when I sat down, and next thing I knew my standard order was placed in front of me, no questions asked (nor needed). It felt like I had gone home!!

Tonight, I had the worst Mexican delivery I've ever tried. Non-authentic with BBQ sauce in place of mole on the cheese enchiladas. Really bad chimichangas covered in plain, sticky white queso.

I spent an entire summer a few years back perfecting my brownie recipe. I experimented with different chocolate combinations, vanillas and other flavorings. I wanted them to be moist and chewy, but not under-baked, and have a deep, rich chocolate flavor. I eventually settled on three kinds of chocolate and a combination of vanilla and almond extract (very little goes a long way -but it does enhance the chocolate). Still incredibly easy to make in a single bowl. No skill required.

r147 Perry Mason ran from 1957-1966. I've seen every episode several times (on MeTV) and I also have the entire series on DVD. I'm interested to see how the reboot with Matthew Rhys turns out. Previous incarnations (including one with Clayton Hollingsworth as Perry) didn't do so well.

R156 you donât taste the coffee when you add it to something chocolatey. It really does deepen the chocolate flavor. I made a cake a few months ago that had coffee as an ingredient and it was awesome! Only tasted chocolate though. No coffee taste.

R154: So the '57 season is the one I'm watching, I guess. I am not interested in Perry after he left black and white, or any of Burr's successive TV. Remakes of any kind, to me, are just tokens of artistic bankruptcy, I have to say. I've never seen a re-made anything that held my attention. The movie biz in the US has gone down the drain, as far as I'm concerned. It's awful, fake, dead...The last time I went in a movie theater was in 2006. I used to go to the movies about 3 times a week. Maybe I just got old.

I'm taking a break from cooking dinner for friends tonight. They needed it to be relatively low fat and vegetarian/vegan. Starter is leek and potato soup. Julia Child's basic recipe, but no touch of cream at the end. Homemade rosemary bread. Wild mushroom risotto (butter and cheese). And for dessert, cantaloupe balls soaked in red wine reduction (Merlot, sugar, lemon zest, fresh basil, and a dash of Chambord). Sounds way more elegant than it is, of course. I use a bread machine, so the only real skill involved is using a melon baller.
Okay, back to work.

For dinner, I've already consumed more than my fair share of allotted calories, considering I'm on my third Maker's Mark & Extra Bold Ginger Ale. (Canada Dry, Thanks Canada!) My starter was a skinny peasant joint.
I'm putting a bit of leftover rare Eye of Round Roast (marinated in Kikkoman Teriyaki and ten garlic cloves) in a salad of Rocket, Butter Lettuce, Romaine, and Radicchio with some Roquefort, red onion, walnuts, and homemade croutons, dressed with a vinaigrette of walnut oil, and seasoned Rice Wine Vinegar, a tiny amount of Maille Dijon, (just enough to emulsify) and fines herbes. I may geek out on a Texas Toast slice of garlic bread if the grass proves too powerful to resist the munchies.

We marinated these fat, bone-in chicken breasts for 48 hours, seared them in an iron skillet then into a hot oven for 20 minutes. Dear lord. So good. Made garlicky greens and kerrygold mashed potatoes to go with them. Ate all of that with glugs of Gruner. Heaven heaven heaven. Now Iâm going to eat a weed gummy then split a salted chocolate tart with my husband. Itâs from Betty...our fave bakery in Brooklyn. Meanwhile right outside of our windows shit is exploding and helicopters are buzzing low with spotlights. Itâs like the movie Brazil.

Since I've been self-barricading at home most of the time these days, my schedule has gotten completely skewed, and I find my dinner hour is now around 10 pm. Tonight I'm having an avocado from my tree, with oil, vinegar, salt and pepper; a beef tamale from Trader Joe's, which I'll steam; and the remnants of some beef, onion & mushroom stir fry reheated from last night. I don't like dessert and I never drink wine, so I'll just continue the Bacardi & Coke Zeros I've been enjoying for the past three hours or so. I've got a shitload of [italic]Judge Judy[/italic] stockpiled on my DVR, so I'll watch a couple of those. And tomorrow I'm going to wash my GMC pickup. By myself. No carwash. I may even vacuum the Siberian Husky fur out of it.

I have two vegetarian Thai noodle dishes that I can't finish. I drank a smoothie made of mango, pineapple, nonfat yogurt, Splenda and white chocolate and it really hit the spot. White chocolate and tropical fruit combines into such an exotic flavor.
I had a plain matcha iced tea as well, for the antioxidants and health benefits. It tasted and looked like murky pond water but I hate myself just enough to drink two of them.

Simple and fast -- Two bone-in chicken breasts with skin on. One-half bunch of parsley. One whole bunch of garlic. One lemon. Olive oil. Salt.
Using a 12-inch skillet place parsley on bottom, slice up lemon and put on top, along with bunch of garlic cut in half. Pour about 1/4 cup olive oil into mixture. Place chicken breasts on top of garlic and rub olive oil into tops. Sprinkle with salt (don't skimp, unless you can't have a lot of salt). Pop into oven uncovered at 450 for 20 mins to a half hour. Thickest part of breast should register 165 degrees (F).

Oh indeed those Genera Foods coffees were hideous. Of course I learned a few years ago most ground coffee is stale, so too allegedly fresh roasted beans. Instead I order dried green coffee beans. Found out temperature is so so important but more important is time. 25 minutes in a West Bend Stir Crazy popcorn maker and a true medium roast is obtained. Then grind, brew and best damned coffee ever. Plus I control the temperature of the water too - 190F tops. None of the bitter components come out. Its awesome with a little cream or just straight up brown/black coffee. Yes I am a caffeine junkie.

Made baked chicken meatballs - I usually use turkey but it has been hard to find in stores lately. It sucks that they came out bland and soft. I usually just eyeball the measurements but decided to use a recipe and I can't figure out what made them so blah and mushy. I ate a couple plain out of the oven and I feel so unsatisfied. I get discouraged when a recipe goes janky so I had a Klondike bar to raise my spirits.

I live in a suburb of Denver. I don't know whose idea it was, but the HOA (not a "real" HOA - I pay $24 a year), has convinced food trucks to come every Wednesday and sit at the local park (in the middle of the neighborhood) from 4-7. They ran out of food by 5:30 last week. I was there today at 4:00 to get my Philly Mac & Cheese and I will just reheat later.
If you have any neighbored connections/belong to an HOA, I can't stress how much everyone LOVED this, and the vendors seemed to be very happy too.

Asian marinated salmon steaks:
Soy sauce, dijon mustard, a little honey, shredded fresh ginger (or a dash of ginger powder), olive oil, and a tablespoon of finely minced garlic (you could use the kind in a jar, or just garlic powder). Marinate in a baggie for an hour in the fridge, turning. You could grill them, but I broil in my toaster oven for a few minutes on each side, then let rest.
Had it with steamed white rice and mixed veg from a pre-packed bag of broccoli and cauliflower florets, baby carrots, and snow peas boiled for five minutes in leftover chicken broth.
Big glasses of Joel Gott Pino Gris ($13 at Safeway).
15 minutes labor total.

I have made coconut cakes, which I really enjoy, but no it wasn't one of them, it was good ol' Pepperidge Farm. A nice slab of that and a glass of milk, and I was a happy camper.
Suggestions for making a coconut cake:
-I prefer a yellow cake, white cake has its fans and does look prettier. Coconut extract is your friend here.
-I make buttercream frosting, and add more liquid to compensate for the coconut absorbing the extra moisture. Since I cannot find the shredded coconut that is packed in cans, the drier, flaked stuff in bags has to be hydrated to a certain degree. Some people prefer '7-Minute Frosting'(way too marshmallow-y for me) or, boiled frosting as it is sometimes called.
-Whatever liquid is in your cake recipe, substitute some of it with coconut milk. You can also use some when make the buttercream.
-I always refrigerate the finished cake, and prefer to eat it ice cold, I like German chocolate cake that way too.
-Don't forget the single, red maraschino cherry for the middle of the top of the cake, for that county fair look.

I havenât had a Pepperidge Farm cake in ages! I must say, the cookies are not as good as they once were. Well, maybe the Chessman are still OK. The rest are just dry.

I made this recipe and honestly didn't like it, but my partner loved it and demanded the leftovers for himself, which I was happy to do. The spices were a little too sweet but it could be that I just don't like some Indian spice combinations.
Made Priya Krishna's red pepper, potato and peanut sabzi to go with it and it was incredible, especially with some roti.

Steak, Japanese koshi rice, ruby chard filched from a nearby public garden (no one had picked a single stalk of it in 2 months), and foraged chanterelle mushrooms cooked in the steak juice with butter and garlic and poured on top of the pot of rice . A meal fit for a king. And some homemade peach ice cream. And there are leftovers.

R280 I think the "Texmati" undernote would be a bit odd in a sweet pudding myself, and think the wild rice would be an unwanted texture.... If you get around to it, let us know how you make out.... Do people make rice pudding with Basmati types?
I ordinarily only cook it for others (my mum is a hig fan) and when I do, it's always Japanese Calrose rice with coconut milk. I add a splash of cream at the end.

R288 Yes, it did, along with clove, allspice, and to my surprise a bit of cardamom...I know it's the perennial butt of jokes on DL, but a friend had recommended the Trader Joe's blend which was surprisingly quite good. Many spices I prefer whole, and like to make my own blends, yet this was very fresh.

[R292] -Coarsely chop your favorite blend of mushrooms, toss with olive oil and a little salt and sprigs of fresh thyme. Roast in a 425 oven for about 20 minutes. Pull out the thyme, and then chop finely and add to a standard béchamel sauce. Add a splosh of good dry white wine and cook to merge the flavors. The better the mushrooms, the better the sauce. I like chanterelles and morels for flavor, and portobellos for texture. Don't forget to season the béchamel with a couple of grates of fresh nutmeg and a dash of red pepper. If you wouldn't want the eat the béchamel plain, as is, then it won't be good when you add things to it. If you have to use dried mushrooms, reconstitute them in vegetable broth rather than water, and replace some of the milk with the mushroom-infused broth. It will look more like a velouté, but you can always add a bit a cream.

So I moved in with my parents because of the Coronavirus. I didn't have to, but they were freaking out, and I was sick of paying $1500 for a shitty apartment, so here I am. This is not my compliant.
EVERY night we have a "fight" over dinner. My mother, who is usually drunk by 3:00 (no, not kidding - it has been like this since Trump won) is always starving and wants to eat at 5:00, and she wants to eat cheap foods (franks and beans was her suggestion last night) because "the world is going to hell and we need to conserve money".
I'd never had them before, but they actually made a good side, but they are not a meal.
My dad, who hides in his office all day watching TV to avoid my drunk mother, rolls in at 5:30 and immediately says, "I don't want that".
I'm working from home, and when I come up from my office, am often presented an involved recipe from the NYT or some shit, and told, "can you make this?"
Never move home. Just move them to assisted living.

The Christmas Moose and I will be having hot toddies with warm peanut butter chasers. I love watching his eyes roll into the back of his head when he shoots a warm peanut butter shot. Then more Latin dancing on the roof deck. Weâll work up to a Conga by 10 pm, damn social distancing. If we get lit enough, we might head down to Copley Place to force innocents to Conga with us.
