Tuna Tartare

Can anyone share their favorite Tuna Tartare recipe?

This Ina Garten recipe looks good but jalapeños, hot sauce and wasabi seems like overkill especially when dulling their sharpness with avocado.

I would use this "classic" beef tartare recipe and sub in tuna. (Egg yolk, mustard, shallot, capers, chives, salt, pepper, cornichon, lemon.)

I agree Ina's recipe sounds like overkill.

If you want to get even simpler, this tuna crudo recipe sounds good (tuna, salt, shallots, capers, crushed red pepper flakes, fresh basil, olive oil, & lemon juice).

R2's recipe is similar to what I do (capers and shallots optional in mine). I might also include some very fresh diced tomato if I had it, which I would salt and drain before adding to the fish. Sometimes I use lime juice and cilantro instead of lemon juice and basil.

Ina's recipe SCREAMS for cilantro, but she doesn't like it. I would add it, and also delete the soy sauce and wasabi.

I have not seen a recipe not eaten in one of her restaurants, but Lisa Vanderpump serves her tuna tartare with fried wontons and the soy appears to be a drizzle. It looks interesting but it seems to lack acid which would be surely necessary with raw fish:

As for Ina Garten - my guess is that she doesn’t like raw fish. There’s way too much going on in her recipe. Likewise a few of the British recipes I’ve come across seem ok, but on closer inspection, in classic English style, they go wild with the aromatics and ruin what could be good, simple, fresh fish. I saw a British recipe one that had garlic, chillies, and white miso (!).

This one actually looks ok: Sesame oil, ginger, orange zest, salt and pepper, green onions, lemon and avocado. 1 Avocado, thinly sliced

Ina's recipe looks over mixed, and gross. Perhaps it's the Wasabi, with the smushed avocado.
