If I’m not mistaken the German word for peach is a based on old German for “Persian Apple.”

I live in North Carolina and we have some good ones grown in the Sandhills here. There is a farm near me from which I buy them and they are remarkable. A perfectly ripe peach, so juicy it is to be eaten standing over the sink, is one of the best fruits ever.

The grocery store ones are hardly ever good. They don’t ship well so are picked too immature. They also should not be refrigerated until they are very ripe or they will never soften or get sweeter.

There are three types, classified on how they “cling” to their stones, or seeds. In these types they are further classified by crisp or mellow, referring to how soft the ripe flesh is when ripe. The two color types are yellow and white. Yellow are sweeter and “peachy-er”, the white ones are often floral or “prefume-y.” Both are good but for eating out of hand, the white ones are my favorite.

Pickled peaches were a special treat during my childhood. In a spiced, sweet-and-sour syrup, they were canned in the summer for serving with the Christmas ham. When I was living in Germany, I asked my grandmother to send me a few jars so I could share them with my German friends. They didn’t really know what to think about them honestly.

Peaches are native to China.

Peaches and nectarines are the same species, even though they are regarded commercially as different fruits. In contrast to peaches, whose fruits present the characteristic fuzz on the skin, nectarines are characterized by the absence of fruit-skin trichomes (fuzzless fruit); it is thought that a mutation in a single gene (MYB25) is responsible for the hair or no-hair difference between the two.

Anyone who's ever grown peaches knows that there is no such thing as a peach ripened on the tree. One day you will test a peach and think "Ahh, tomorrow you're going to be perfect". At that moment, 15 birds keeping watch from the trees overhead start chattering to each other about the race they're going to have that evening to peck at that peach to see who gets the most delicious bite. The next day, you go to find a pit hanging on the tree with little bits of tattered flesh surrounding it. Nope, in real life peaches have to be picked a few days earlier than true ripe. However, they will ripen deliciously indoors in 3 or 4 days, just as if they'd been on the tree. Picking them 2 weeks ahead of time---- that's a recipe for a hard, inedible, mealy peach.

To get the skin off a peach, immerse it in boiling water for one minute. Then let it cool enough to handle. The skin will slip right off. This technique works best when the peach is ripe.

I used to take freshly bought and therefore unripened pears to the beach in a plastic bag, or left on the car dashboard, and in both cases, they’d essentially “cook” until eaten later that day, and be perfect. Would that work with peaches? This question for the peach experts, of which we seem to have a few.
