Once when I was ill my crazy ass old lady neighbor brought me some chicken soup.
Well, she said it was chicken soup. She didn't eat meat so there was no chicken in it. She was sensitive to strong flavors so it wasn't salted.
She always smelled like pee so I thanked her, closed my door and poured it down the sink.

David Rosengarten used to have a show on the Food Network, which I really loved. He was an excellent teacher. I can remember him 'doing' roast chicken, and one point he made is that it's very difficult to over-salt a roast chicken. My Mom had her thyroid removed, and was told to avoid salt, so so much of her food was very bland. I don't shy away from salt: I was actually advised to drink less water, since my sodium levels were so low. I asked my PCP if I could just eat more salt, and was told it didn't work that way (????) So I use plenty of salt. Also, I'm one of those people who use hot sauce on almost everything (please don't judge). A long time ago, I worked in an Asian restaurant with a number of Southeast Asian people, and one of my favorite waitresses would always prepare a plate for me when we all had lunch, and she'd splash hot saucer over everything. She would just say, "How can you even taste it without hot sauce?" So I developed a taste for it over 35 years ago.

I like the drumstick and thigh of chicken best. The breasts can be pretty dry, but when done right, are pretty delicious, too. The breasts are good for soups and salads.

Back in the Middle Ages, spices were really expensive, which meant that only the upper class could afford them. But things started to change as Europeans began colonizing parts of India and the Americas.
"Spices begin to pour into Europe," explains Krishnendu Ray, an associate professor of food studies at New York University. "What used to be expensive and exclusive became common."
Serving richly spiced stews was no longer a status symbol for Europe's wealthiest families — even the middle classes could afford to spice up their grub. "So the elite recoiled from the increasing popularity of spices," Ray says. "They moved on to an aesthetic theory of taste. Rather than infusing food with spice, they said things should taste like themselves. Meat should taste like meat, and anything you add only serves to intensify the existing flavors."

I’m hypertensive (not fat, for all you supposers) and a dr wanted me to cut out any prepackaged foods because when I was in the hospital NPO for 6 days, my BP was normal. Well, duh. I was lying in a bed the whole time, not walking, not cleaning my house, not food shopping in overcrowded stores with too few cashiers, not sitting in traffic jams, not being awakened by leaf blowers and all-day-long construction work in my neighborhood; not feeding the cats or cleaning the litter boxes, not cleaning the pool, mowing the lawn, weeding, pruning, cleaning winter-induced mildew from the outside of my house & shed.....
No added salt to my diet, no prepackaged food and only low sodium food lasted for one week. I went back to my old dr and got my blood pressure medications re-prescribed.
(He also wanted me taking fistfuls of fish oil capsules a few rms a day. I got back on my cholesterol lowering medication instead)

A couple of years ago, someone here on Datalounge linked this NYT recipe for chicken provencal. I've made it several times and have loved it every time. No one should have to eat chicken unseasoned or with little seasoning. When you make it, your kitchen will smell divine. The roasting chicken with herbs de provence an garlic is just amazing.
