I always have a jar of kimchi in my fridge.
I probably eat ½ cup a week, just to keep my guts working properly. Plus I like the taste; there are so many varieties.
I doctor my kimchi with some additional fiery chili flakes and a shake of garlic powder.
Often I’ll serve it with some steamed pork pot stickers for a light lunch or supper.
Kimchi is an acquired taste — no one else in my family can stand it — but I really like it.

The "emergency" (non-fermented) style of kimchi is easy to make, delicious, and has just a few ingredients. You can swap out cabbage for radish and it's even easier. Here's Maangchi's recipe.

I am fond of both sauerkraut and kimchi, but they are not the same thing.
At Korean restaurants, I've usually just get the chicken bulgogi with the five side dishes, but lately I've been ordering the hot tofu soup also in an effort to boost my sluggish metabolism.
