I made a batch of Kittencal’s Parmesan meatballs (make this, bitches. It’s one of the few recipes I have memorized because they’re perfect and I make them often). I drop them in simmering diced tomatoes and let it cook down. The meat and garlic flavor the sauce. I leave the pot out for my family to serve themselves. They’ll taste even better tomorrow. These are the best meatballs I have ever tasted.

Two plates shared: roasted brussels sprouts lightly napped with barbeque sauce and fried onion rings as an appetizer, the fall salad (roasted beets, apples, figs on mesclun and arugula with whipped feta and an apple cider vinaigrette), and a hanger steak in a poblano sauce. And a pisco sour for my cocktail.
The hostess was interesting: AA, lovely, and channeling Aunt Jemima with a beautiful black and silver embroidered do-rag.
The only thing I made was the money to pay the check as it was my friend Rose's birthday. No, not that Rose.

Take out...the worst chicken Marsala I'd ever eaten. They didn't use thin cutlets but big thick ones that were not even flattened. They were really cheap on the mushrooms, my favorite part and I wasn't in the mood for pasta so I picked sweet potato which wasn't too bad. It had a little flavor. I'm still hungry since basically I had about 6 mushroom slices and whatever sauce I could scrape off the god awful tough stringy chicken and a scoop of sweet potatoes. I don't like to eat after dinner so I guess I'll think about something other than my stomach and wait for breakfast tomorrow.
Last week I got pepper steak from that same place and it was delicious and tender. I got it with rice. It's not a Chinese place. It's an American place. Oh yeah, I also got a good roasted chicken leg with mashed there once. Oh well. I just won't ever again order the chicken Marsala again.

my don't make too often because it is so addicting and delicious home made pasta: ( the dish NOT the pasta)
throw some butter in the pan. micro-pane a shit ton of garlic and saute in butter add a tablespoon or so of chicken bouillon
add a can (or two) of GOOD chicken broth. ( little to no flavor therefore the bouillon) boil. add enough pasta to fill the pan.....i use birds nest shape but i crunch it all up in pieces so i don't get a huge clump of chewy pasta. use any kind you like as long as it is not thick..
add a lot of pepper and simmer down til there is just a bit of broth left..... add Parmesan cheese and stir in.....still simmering.... if you need more broth add it....if you used too much bouillon= too salty just add as much hot water as needed....
i like it just like that. as you know, you can throw in anything else you want.....herbs, spices, ect.... it is easy, quick and so good it is sinful. it might sound crappy but trust me......+ you have left overs for days......
by Anonymous | reply 98 | October 25, 2018 2:03 AM |
hi guys: just a PS
i forgot to say when i throw that freshly ground pepper in that pasta dish i also throw in quite a bit of dried chopped onion..(kirkland but any brand will do....theirs is like little squares).....i put that in the boiling/simmering broth 1st......anyway, you may be farting a lot after you eat a bowl or 2 of this but you will not regret it........

R122 I tried regular and organic, in this case organic is way better. Cooks faster and gets softer than non-organic.
by Anonymous | reply 123 | October 27, 2018 6:36 AM |
R122 I love red or tri colored quinoa. Red quinoa is the lowest fat content and tried color just adds texture. I have never tried flavored because I like to add my own. My favorite is a cold quinoa salad.
Cook quinoa and chill then add white shoepeg corn, dried cranberries, black beans, chopped red onions, chopped red pepper, chopped cilantro, feta cheese, olive oil, lime juice, salt and pepper to taste.
