Cheese aficianadoes, I need advice on mozzarella. I'm in Ireland, so getting it fresh or locally is not an option. I've recently been getting it from Aldi-it's German made but frankly tasteless. Aldi also have Buffalo Mozzarella which is made by a guy in Cork, and the taste is incredible. It's twice the price, but that's not an issue. I wondered if the choice of milk used is an issue with respect to taste, or is it that mass produced mozzarella is just rubbish.

Mass produced mozzarella is all shit. Yes, the milk used makes a difference in the flavor. I don't see why you can't get cheese produced locally, I'm sure there are cows.

You can make your own fresh mozzarella. Just use good milk. The Irish make good butter; there must be some good milk there.

Choice of milk and processing. TBH mozzarella isn't the most flavourful cheese to begin with. The mass produced version uses cow's milk but traditionally it's made with buffalo milk and pulled etc. I don't think the mass produced stuff is pulled or whatever you say the same way.

Cows in Ireland eat grass and are not allowed to be fed corn and soy like cows in the USA. The dairy tastes very different, and it's why Kerrygold butter taste so much better than American butter.

You should be able to get Italian mozzarella in most supermarkets. The buffalo ones cost twice as much. I buy the low-fat cow's milk ones at Lidl. Half the fat, 2/3 the calories and I like the texture better. Buffalo mozzarella is creamier.
